Spinach Pie

This is basically a crustless quiche. It is great served for brunch, lunch, as an appetizer, or even as a dinner side dish. So good !

16 oz. low fat cottage cheese
10 oz. frozen chopped spinach, thawed, and drained well (press in a sieve to get rid of all the water)
1 c shredded low fat mozzarella cheese
4 eggs, lightly beaten
6 oz. roasted red peppers, well drained, and chopped
1/3 c grated parmesan
1 t oregano flakes
½ t garlic powder
½ t onion powder
Salt and pepper to taste

Preheat oven to 350 degrees. Mix spinach and cheeses. Add eggs, peppers and spices. Pour into a 9 inch pie plate or cake pan sprayed with Pam. Bake 40 minutes or until the center is set. I like to use a glass pie plate for this, that way if the center does not set before the top is getting brown (which sometimes happens), you can slip it into the microwave for a few quick minutes to finish it up. This reheats great !

Grilled Onions

Serve these next to just about any chicken, beef or pork dinner for a great zesty side.

2 large onions, cut into ½ inch slices
2 T oil
2 T Dijon mustard
1 t chili powder
Kosher salt and cracked pepper to taste

Preheat grill. Mix mustard and chili powder. Toss onions with oil then place onion slices in a grill basket or on a grill plate sprayed with Pam. Sprinkle with salt and pepper. Grill 5 minutes or so per side basting with the sauce along the way.

Jazzed Up Refried Beans

This dish is worthy of any Mexican restaurant out there ! The salsas give the beans a subtle flavor and the velvety consistency of the refried beans is a perfect side to all Mexican fare. Try serving with Mini Chile Rellenos for a great Mexican inspired night.

16 oz. can nonfat refried beans
15 oz. can pinto beans, rinsed
¼ c prepared salsa
¼ c prepared salsa verde
2/3 c shredded low fat sharp cheddar cheese
4 scallions, sliced

Preheat broiler. Mix Beans, refried beans, salsas and 1/3 c of cheese in a pan and cook until hot throughout and the cheese has melted. Turn into a casserole dish sprayed with Pam. Sprinkle with the rest of the cheese and the scallions and broil 2 minutes or until cheese is brown.

Vegetarian Stuffed Peppers

So different from your typical stuffed pepper – this is a great vegetarian recipe. These make a great dinner with a side salad. Or serve half a portion (1/2 a pepper) as a side.

4 yellow bell peppers
1/2 c orzo
15 oz. can chickpeas, rinsed and drained

1 large shallot, chopped
6 oz. baby spinach, chopped coarsely
1 t oregano flakes
1 t garlic powder
1/2 c crumbled feta cheese
½ c shredded low fat mozzarella cheese
1/4 c sun dried tomatoes, (dehydrated, not the ones in oil), chopped
1 T sherry vinegar
Salt and pepper to taste

Preheat oven to 350 degrees. Take the peppers and cut them in half lengthwise. Leave the stems on. Clean out the insides (seeds and membranes) and set aside. Cook orzo according to package instructions. Heat a skillet and spray with Pam. Saute shallot for 3 minutes adding a tablespoon or 2 of water if they start to dry out. Take ¾’s of the chickpeas and roughly mash them. Add spinach to shallots and cook another minute. Add orzo, chickpeas, oregano, garlic, tomatoes, salt and pepper and heat through. Add cheese and vinegar and stir well. Spoon mix into the pepper shells. Spray a baking dish with Pam and place peppers in pan. Sprinkle with mozzarella, cover and bake 30 minutes.

Perfect next to grilled fish, grilled chicken, burgers – – this corn salsa is so easy to put together and so refreshing on a hot summer night.

1 avocado, peeled and diced
1 c frozen corn kernels, thawed (you can use canned, but the frozen tastes fresher)
½ can diced tomatoes, drained
2 T chopped cilantro
3 T lime juice
1/2 t cumin
Salt and pepper to taste

Combine all and serve immediately.

Curried Cucs and Avocado

My friend grows the tastiest cucs ! And they are just perfect in this salad. Just a bit of curry, just a bit of Tabasco, lotsa lime and great veggies. This is one you’ll make again and again.

1 large cucumber peeled, seeded and diced
1 t salt
½ red bell pepper, diced
Zest of one lime
Juice of one lime
2 T chopped cilantro or parsley
1 ½ t sugar
½ t curry powder
A Couple of dashes of Tabasco
1 avocado, diced

Take the cucumber pieces and sprinkle with salt and set in a colander to drain. This helps some to remove some of the bitterness that some cucumbers have. Mix pepper, lime zest, lime juice, cilantro, sugar and Tabasco. Pat the cucumbers dry and add to the pepper mix. Finally add the avocado and serve immediately.

Black Bean Broccoli

I like broccoli – this recipe makes me LOVE broccoli. The black bean sauce is a perfect addition to crispy broccoli. The flavor is definitely Asian – so serve the next time you have an Asian themed menu.

1 t sesame seeds
1/2 c water, divided
1 t rice wine vinegar, or white-wine vinegar
1 t cornstarch
2 t black bean-garlic sauce (readily available in the Asian section of your market)
2 t canola or vegetable oil
1 clove garlic, minced
4 c broccoli florets

Heat a small skillet on medium low and add seeds. Cook 2-3 minutes to toast and bring out the flavor. Set aside. Mix ¼ c water, vinegar and cornstarch then add black bean sauce and stir well. Heat oil in a large nonstick skillet and add garlic. Cook 30 seconds then add broccoli and stir well. Add ¼ c water to the pan, cover and steam broccoli 3 minutes. Then push the broccoli to the sides and pour the sauce in the center and stir a minute or so until it thickens then mix sauce well with the broccoli. Sprinkle with the sesame seeds and serve immediately.

Quick and Easy Mushroom Risotto

This consistently turns out an awesome risotto textured dish yet takes so little time to make ! Be sure to use Arborio rice or it just won’t turn out tasting like risotto. Get creative with your mushrooms – mix it up, use some canned, some fresh, some baby bellas, some portobellos – have fun 🙂

1/3 c chopped shallots
1 T butter
2/3 c Arborio rice
2 c water
1 t chicken bouillon powder
Salt and pepper to taste
2 c mushrooms (your choice on type of mushroom) diced very small
Pam
½ t onion powder
¼ c grated parmesan cheese

Heat butter and cook shallots until tender. Add rice and cook and stir 2 minutes. Stir in water, flavoring, salt and pepper and bring to a boil. Then reduce heat, cover and simmer 20 minutes. Spray a small skillet with Pam and sauté mushrooms with onion powder for 3-4 minutes. Stir mushrooms into finished rice (it will still be quite moist) and let stand covered 5 minutes. If not a creamy texture, add in some hot water. Finally stir in parmesan cheese.

Buttery Broccolini

Broccolini is a cross between broccoli and kale. The stalks are more tender than regular broccoli and the flavor is so bright and fresh.

4 quarts water
1 t salt
24 oz. broccolini
2 T butter, room temperature
1 t grated lemon zest
1 T lemon juice
1/2 t Molly McButter
Salt and pepper to taste

Boil water and add 1 t salt. Boil broccolini and then remove from hot water. Mix butter, zest and juice in the same pan once the water is removed. Add broccolini and mix well. Sprinkle with salt and pepper and Molly McButter, then stir and serve.

Succotash

I was a weird kid – I loved succotash and asked for it regularly ! I had not made it in quite some time, but now that I have the perfect recipe, I’ll be making it a whole lot more often.

4 slices bacon, chopped
1 small onion, chopped
16 oz. frozen lima beans
1/2 c water
10 oz. frozen corn
1/2 c skim milk
2 T butter
2 T cider vinegar
Salt and pepper to taste
1 t Molly McButter

Heat a skillet and cook bacon until crisp then remove it and drain on paper towels. Add onion and cook 5-6 minutes. Add beans and water and cook 5 minutes then add corn, milk, butter and vinegar and bring to a boil. Reduce heat and simmer 10 minutes. Stir in bacon. Add Molly McButter, salt and pepper and serve immediately.
