Braised Pork in Cream Sauce

What a GREAT sauce this makes ! I think it would be equally as good on chicken or even steak. You definitely have to give this one a try for a nice change to pork chops – these are definitely NOT boring, old pork chops. Try serving with Roasted Brussel Sprouts.

6 4 oz. boneless pork chops
¼ t salt
1/8 t pepper
¾ c beef broth
1 T barbecue sauce
1/3 c fat free evaporated milk
1/3 c fat free sour cream
3 T flour
Pam

Sprinkle meat with salt and pepper and cooked in a heated skillet sprayed with Pam. Cover and cook 3 minutes on each side. Combine ½ c broth and the barbecue sauce and pour over the chops and cover the pan, reduce heat to medium low and cook 10 minutes. Remove pork chops and keep warm. Combine ¼ c broth, milk, sour cream and flour and mix with a whisk. Pour into skillet and stir over medium heat for 3 minutes and thick. Pour over chops and serve.

White Bean and Garlic Dip

This is great served with sliced up veggies or pita chips. It has a nice mellow flavor and makes a great snack or appetizer.

10 cloves garlic
1 19 oz. can cannellini beans, rinsed and drained
2 T low fat sour cream
2 T lemon juice
2 t sesame oil
½ t ground coriander
¼ t salt
¼ c chopped parsley
1 t paprika

In a small pot of boiling water cook the garlic for 3 minutes. Drain and reserve 2 T of the cooking liquid. Peel the garlic and in a food processor mix the garlic, reserved cooking liquid and beans and mix until you have a smooth puree. Add the sour cream, lemon juice, oil, coriander and salt and process to blend. Serve sprinkled with parsley and paprika.

Fettucine Carbonara

Once again, FiberGourmet Pasta makes it possible to have a serving of this PLUS a side and that makes me a happy camper 🙂 This carbonara is very tasty and without any oil, it comes in at just 300 calories per serving. Enjoy !

8 oz. FiberGourmet fettuccine noodles (without FiberGourmet pasta, you have to add another 80 calories per serving to this)
2/3 c fat free chicken broth
1 medium onion, chopped
3 oz. Canadian bacon, in thin strips
3 c sliced mushrooms
1 c frozen peas
¼ c grated parmesan cheese
2 T fat free sour cream
Salt and pepper to taste

Bring the broth to a boil then add onion and cook 3 minutes. Then add the bacon and mushrooms and cook another 5 minutes or until mushrooms are very soft. Add the peas, salt and pepper and heat through and then stir in the cheese and sour cream. Cook pasta according to directions and serve with sauce.

Chicken and Cheese Tostados

I always find tostados a bit hard to eat – do you crack the tortilla and scoop? Do you pick it all up and eat it like a pizza? For this one, I folded the shell over like a taco 🙂 The flavors in this dish mix incredibly well and this is a GREAT lunch.

6 6 inch flour tortillas
1 package (1.4 oz) taco seasoning
1 lb. boneless skinless chicken breasts in bite sized pieces
½ c water
2 large tomatoes, chopped
7 oz. shredded non fat cheddar cheese
6 T low fat sour cream
¼ c chopped cilantro

Preheat oven to 400 degrees and place tortillas on a cookie sheet and spray with Pam. Sprinkle with 1 t taco seasoning and bake 8 minutes or until tortillas are crisp and golden. Mix chicken with the rest of the seasoning mix and water and bring to a boil in a skillet then simmer 5 minutes or until chicken is done. Add 1 ½ c tomatoes and cook another 2-3 minutes them remove from heat and stir in 1 ¼ c cheese. Place the mix over the heated tortillas and then top with the rest of the tomatoes and cheese.

Pop Chips and Dip

Pop Chips are these amazingly good chips that are popped (much like popcorn) rather than fried or baked. They are low cal, healthy and delicious and I am so hooked ! And there is nothing like a good onion dip – people always want my recipe for this one and can’t believe it is so simple. (It’s great with chips, pretzels, cut up bell pepper strips, celery)

2 t dry onion soup mix

For dip mix 3 T low fat sour cream with 2 t dry onion soup mix.

Pop Chips – an awesome snack coming in at only 100 calories for a nice portion bag.

Turkey Stroganoff

Think Hamburger Helper without the hamburger 🙂 For the stroganoff flavoring and the noodles, I just used a box of Hamburger Helper Beef Stroganoff. But then I substituted turkey and added a few twists. This one is really super good !

1 lb. lean ground turkey
½ t pepper
½ t salt
1 t gravy master
1 t dehydrated onion flakes
3 ½ c water
1 package beef stroganoff sauce mix
3 c uncooked medium egg noodles
½ c sour cream
½ c canned peas
Parsley for garnish

Cook turkey in a hot skillet on medium high heat until it is no longer pink. Toward the end add 1 t of Gravy Master or Kitchen Bouquet so that the meat gets browner and more resembles ground beef. Mix in salt and pepper, onion flakes, water, sauce mix and noodles and bring to a boil. Then reduce heat to medium low, cover and cook 8 minutes or until noodles are tender. Half way through, stir in the peas. Stir in sour cream and heat through on low heat. Garnish with parsley just before serving.

Potato Skins

These are very filling and make a great snack, appetizer or even a side to a low cal fish dish. You can always dress them up with more ‘stuff’ and just each one to keep the calorie count down – they are very filling, so one should do as a side. Tye adding some cooked crumbled turkey bacon, or some extra low fat cheddar cheese…maybe even some caramelized onions !

4 large potatoes (8 oz. each)
2 t oil
¼ c parmesan cheese
½ c skim milk
3 T low fat cream cheese
¾ t salt
¼ t pepper
3 T low fat sour cream
3 T sliced scallions

Preheat oven to 450 degrees. Wash the potatoes and prick them with a fork. Microwave on high 10 minutes, then turn and microwave another 5 minutes. Let cook a bit and then slice in half lengthwise and carefully scoop out the flash keep the skins intact. Place the skins on a cookie sheet and brush with the oil and sprinkle with 2 t of the parmesan cheese. Bake 10 minutes or until golden. Meantime mix the rest of the parmesan with the potato, milk, cream cheese, salt and pepper. When skins are toasty, fill with the potato mix and bake another 7-9 minutes or until hot throughout. Dollop with sour cream and sprinkle with scallion just before serving.

Chicken with Grapes

The grapes did not really ‘make’ the dish and the chicken could certainly be served on its own since the sauce was really tasty. But the grapes certainly made a more standard chicken dish into something special and definitely company worthy !

2 t oil
4 5 oz. boneless skinless chicken breasts
2 T flour
½ c dry white wine
¾ c chicken broth
½ t salt
¼ t pepper
¼ t rosemary flakes
2 c seedless red and green grapes, halved
3 T low fat sour cream
¼ c parsley, chopped

Heat oil in a large skillet on medium high heat. Dredge the chicken in the flour and shake off any excess, but reserve it for later. Cook the chicken 3 minutes per side or until browned. Add the wine to the pan, increase heat to high and cook 2-3 minutes. Add the broth, salt, rosemary and pepper and bring to a boil and then reduce heat to low, cover and simmer 5 minutes or until chicken is done. Add the grapes and cover and cook another 5 -7 minutes or until grapes are tender.

Whisk sour cream and any leftover flour. Stir into the pan and cook, stirring constantly, 2-3 minutes or until the broth is thickened. Plate chicken and add parsley to the sauce and then spoon it over the chicken.

Black Bean Hummus

This is exactly what is says – the flavor of black bean dip mixed with the flavor of hummus and it was quite good ! Serve with Triscuits or homemade pita chips for a great appetizer or snack !

1 ½ cups
43 calories per serving (1 serving = 2 T)

15 oz. can black beans, rinsed and drained
1 T tahini (sesame seed paste)
1 T low fat sour cream
4 garlic cloves, minced
1 T minced tomato
1 T lime juice
1 t cumin
Pepper to taste

In a food processor mix all ingredients and process until smooth.
