Grilled Onion Burgers

So savory and sooooo tasty ! Cooking the onion right in the burgers is a nice touch and there is sooooo much flavor from the grilled onion.

1 large onion
1 lb. extra lean ground beef
1 ½ t garlic powder
4 slices low fat Swiss cheese
2 t oil
4 slices thick, hearty bread, toasted
Salt and pepper to taste

Peel onion and cut off 4 ¼ inch thick slices. Shape meat into patties and sprinkle with salt, pepper and garlic powder and then press one onion slice into each burger and shape meat around the onion so it is even with the meat. Place burger onion side down on a hot grill and cook 5 minutes. Flip burger and cook another 5 minutes. Top with cheese during the last minute of grilling.

Chicken Cordon Bleu

This is a very traditional dish that has been skinnied up – but don’t think it’s short on the flavor !

4 5 oz. boneless, skinless chicken breasts
Salt and pepper to taste
1/3 c shredded Swiss cheese
2 T low fat cream cheese
1/4 c breadcrumbs
1 T chopped parsley
4 t oil, divided
1/4 c chopped ham

Preheat oven to 400 degrees. Sprinkle chicken with salt and pepper. Mix swiss and cream cheese. Mix some pepper with the breadcrumbs and parsley then add 2 t oil. Heat 2 t oil in an oven proof skillet and cook the chicken 2-3 minutes per side to brown it. Move chicken to a baking sheet sprayed with Pam and spread with cheese. Sprinkle with ham and breadcrumbs. Bake 7-8 minutes or until done.

Open Faced Bacon Melts

This makes a great brunch or lunch. The flavors mingle very nicely and the sharp flavor from the swiss cheese adds a nice flair to this sandwich.

1 light English Muffin (100 calories)
Mustard
2 thin slices Canadian Bacon
1 slice tomato
2 basil leaves
2 slices light Swiss cheese (80 cals per slice)
8 spritzes ICBINB Spray

Spray muffin with ICBINB Spray and then spread with a little mustard. Add bacon, basil and tomato and then place on a pan in your toaster oven and heat through. Finally top with cheese and heat until it is melted.

1 can 26 oz. Light Cream of Chicken Soup
2/3 c low fat sour cream
1/2 t pepper
1/2 t onion powder
10 oz. frozen veggie mix (carrots, cauliflower, broccoli), thawed
6 oz. frozen green beans, thawed
1 medium zucchini, chopped
1 c shredded Swiss cheese
1 c Stovetop stuffing mix

Preheat oven to 350 degrees. Mix soup, sour cream, onion powder and pepper then stir in veggies, 1/2 c cheese. Turn into a 2 quart baking dish. Cover and bake 40 minutes. Stir and then top with the rest of the cheese and the stuffing mix and bake 5 minutes uncovered.

3 1/4 pounds russet potatoes (equaling roughly 8 potatoes)
1 c milk
1/3 c light sour cream
1/4 c low fat buttermilk
1 c shredded fontina or swiss cheese
1/4 c finely chopped chives (or 1 t dried chives)
2 T butter
Salt and pepper to taste
6 T grated parmesan cheese

Preheat oven to 400 degrees. Clean potatoes and pierce them then bake one hour or until tender. Let cool a bit and then cut in half lengthwise and scoop out most of the flesh leaving a shell and about ¼ inch of potato on it. Preheat your broiler at this point. Mix the scooped out flesh with milk, sour cream, buttermilk, salt and pepper then stir in the fontina, chives and butter and place potatoes on a baking sheet. Sprinkle with parm and paprika. Broil 3-5 minutes or until cheese is all melted.

French Onion Soup

Great French onion flavor in a simple to prepare soup that has such a depth of flavor. The sweet onions cook to perfection and the melted cheese over the top of the French bread is just delicious. The parmesan really adds a nice touch.

2 T margarine or butter
2 1/2 large Spanish onions, peeled, sliced very thin
½ t Kitchen Bouquet
2 cloves garlic, minced
14.5 oz. beef broth
2 1/2 c cold water
½ c cooking wine (red or white)
2 bay leaves
6 slices French bread, toasted
1 c shredded Swiss cheese
1/4 c grated parmesan cheese
Salt and pepper to taste

Melt butter and add onions. Cook ½ hour or until golden brown. Stir frequently and add a tablespoon or 2 of extra hot water if needed to keep onions from getting crisp. Add Kitchen Bouquet, some salt and the minced garlic and cook a minute longer. Add broth, water, wine, and bay leaves. Cover and simmer for 1 hour. Preheat broiler. Remove bay leaves and place in individual oven safe ramekins or bowls. Top with a slice of French bread and sprinkle with parmesan then the grated Swiss and broil 3-4 minutes or until cheese is all melted and just starting to brown.

Hot Chicken and Swiss Sandwich

Sometimes serving a sandwich hot makes it sooooo much more special. This is one of those times. The melted swiss just gives it a whole other dimension.

4 slices thin sliced deli chicken breast (Oscar Mayer pre-packaged meats are great)
1 slice low fat swiss cheese
1 t light mayonnaise
1 t mustard
¼ t parsley flakes
¼ t basil flakes

½ c spinach leaves

Preheat oven to 350 degrees. Mix mayo and mustard and spread on bread. Add chicken and cheese and sprinkle with the spices. Wrap in foil and bake 10 minutes. Remove from oven, add spinach leaves and enjoy !

Arugula and Chicken Sausage

There are so many good things in this casserole – and all the flavors mesh incredibly well. The mellow swiss cheese is the perfect cheese for this recipe.

1 cup Egg Beaters
4 large eggs
1 c skim milk
2 T Dijon mustard
Salt and pepper to taste
½ c fresh basil, sliced
4 c wheat bread cut into 1 inch cubes
5 c chopped arugula
¾ c canned artichoke hearts, chopped
1 c cooked chicken sausage, sliced thin
¾ c shredded swiss cheese

Preheat oven to 375 degrees. Spray a baking dish with Pam. Rinse the arugula and then place in a bowl and cover with plastic wrap. Fold back one edge leaving just a bit of an open slit. Cook 2-3 minutes to wilt the arugula then drain well and squeeze out extra water.

Whisk egg whites, Egg Beaters and milk then add Dijon, salt, pepper and basil and stir well. Mix together bread cubes with the arugula, sausage and artichokes. Pour in the egg mix and toss well. Place in baking dish and cover with foil then bake 45 minutes. Sprinkle with cheese and continue baking 20 minutes UNCOVERED. Cool for 15 minutes.

1 T low fat thousand island dressing
1 slice low fat swiss cheese
3 oz. smoked turkey deli meat
2 T sauerkraut, rinsed and drained
Salt and pepper to taste

Preheat oven to 350 degrees. Spread half the dressing on both buns. Add cheese, turkey and kraut to the roll and sprinkle with salt and pepper. Top with the remaining piece of roll, wrap in foil and bake 5-7 minutes.
