Broccoli Cheddar Dip

So easy to make – this takes just a few minutes. And the results are SUPER ! There will be lots of yummy noises as your group eats this one up. Serve with low cal crackers.

10 oz. package frozen broccoli
8 oz. Cabot low fat sharp cheddar, grated
4 oz. cream cheese
2 T milk
1 t Tabasco sauce
1/2 t pepper

Microwave broccoli in a partially covered dish 8-10 minutes. Add cheddar, cream cheese, tabasco and pepper. Recover and microwave 1-2 minutes or until cheeses are melted. Stir until smooth. Serve immediately with crackers.

Citrus Tomatoes

What a great flavor ! The orange gives these tomatoes a great fresh flavor. Try on your favorite heirloom or farmer’s market tomatoes for a great side dish so low in calories, but so big in flavor !

2 T fresh squeezed orange juice
1 ½ t orange zest
1 ½ t lime zest
1 T lime juice
Dash if kosher salt
Dash of Tabasco sauce
2 small tomatoes, sliced
1 t fresh chives, sliced

Mix together all except tomatoes and chives. Plate tomatoes and drizzle with dressing. Then sprinkle with chives.

3.5 oz. bag of plain microwave popcorn
2 T buttery spread
2 T spicy brown mustard
2 t chili powder
2 t hot pepper sauce

Preheat oven to 375 degrees. Pop popcorn according to package instructions. In a large bowl combine margarine, mustard, chili powder and hot pepper sauce. Microwave 45 seconds or until butter is melted then stir well and add popcorn and mix well to coat. Turn into a baking pan and bake 10 minutes or until popcorn browns a little. Cool completely before serving.

Zesty Chicken

This dish takes crispy chicken to the next level. After you cook it up, you make a quick glaze and run the chicken through it before serving. This makes is sooooo very flavorful, very moist, and something just a little different from your regular breaded chicken.

2 5 oz. boneless skinless chicken breasts
¼ t kosher salt
1/8 t pepper
¼ c panko breadcrumbs
2 t garlic clove, minced
¼ t oregano flakes
2 T lemon juice
2 T honey
2 t Tabasco sauce
1 t grated lemon zest
2 t olive oil

Season chicken with salt and pepper. Mix breadcrumbs, garlic and oregano and dredge chicken in the breadcrumb mix. Mix lemon juice, honey, Tabasco and zest to make a glaze. Heat oil in a skillet and add chicken and brown both sides, cooking about 6 minutes per side or until done through. Remove chicken from skillet and add glaze and reduce until thickened, about 1 minute, Return chicken and flip to coat both sides with the glaze.

1 can Campbell’s Light Chicken Gumbo Soup
1 c water
1/8 t garlic powder
1/8 t onion powder
1 1/4 cups instant white rice
5 drops tabasco sauce

Mix soup, water and spices and bring to a boil. Add the rice and remove pan from heat and cover it. Let stand 5 minutes. Add tabasco and mix well. Serve immediately.

Avocado Tacos

Creamy goodness all wrapped up in a yummy tortilla. Get your MUFA for the day and smile while you do it 😉 This tastes much like yummy guacamole; just a bit milder, but perfect for a lunch tortilla.

3 avocados, mashed
1/4 t garlic salt
¾ c chopped cilantro
Pepper to taste
A few drops of Tabasco sauce
12 tomato slices
Lime juice

Mix avocados, garlic, pepper, Tabasco and cilantro. Spread the mixture in each tortilla and add 2 tomato slices. Squirt with lime, fold and eat.

White Bean and Tomato Salad

The addition of beans makes this salad filling and add extra fiber to your meal. This is a great summer side that hits the spot.

1 T white vinegar
1 T lemon juice
1 t Dijon mustard
1 drop Tabasco sauce
2 t oil
16 oz. can white beans, drained and rinsed
2 T chopped basil
1 T chopped parsley
1 scallion, chopped
1 clove garlic, minced
6 cherry tomatoes, halved
½ large red bell pepper, finely diced
Salt and pepper to taste

Combine vinegar, lemon juice, mustard and Tabasco and whisk while adding the oil. Combine beans, tomatoes, bell pepper, basil, parsley, scallions and garlic. Add the dressing and toss well to coat the cover and refrigerate ½ hour. Just before serving add salt and pepper to taste.

Green Goddess Dressing

Green Goddess dressing was invented in the 20’s at the Palace Hotel in San Francisco and was quite popular for many years. You don’t see it too often anymore, but it’s a great change from the typical ranch dressing and is a snap to make. This one is lightened up using low fat mayo and rich, thick Greek yogurt and I find it perfect on a crispy lettuce such as iceberg.

1 c plain fat free Greek yogurt
½ c low fat mayonnaise
2 t Worcestershire sauce
2 t lemon juice
½ t Tabasco
3 canned anchovy fillets
1 clove garlic, minced
2/3 c parsley
¼ c tarragon
¼ c chives
¼ c chervil

Place all the ingredients in a blender and blend well.

Chilled Cucumber Soup

What a burst of flavor you get from the fresh herbs in this soup ! Totally refreshing and so summery. Serve next to your lunch sandwich or as a quick palate cleanser in between courses of your favorite summer grill fare. 1/2 c fresh basil
1/2 c fresh mint
1/4 c sliced scallion
1 c water
½ of a large English cucumber, peeled, seeded and cut into a few pieces
1 T lemon juice
1/2 t Tabasco sauce
Salt to taste

In a food processor mix sour cream, basil, mint, water and scallions very well. Then add cucumber, lemon juice and salt and just pulse a few times making sure you leave cucumber chunks. Chill up to 6 hours.

Curried Cucs and Avocado

My friend grows the tastiest cucs ! And they are just perfect in this salad. Just a bit of curry, just a bit of Tabasco, lotsa lime and great veggies. This is one you’ll make again and again.

1 large cucumber peeled, seeded and diced
1 t salt
½ red bell pepper, diced
Zest of one lime
Juice of one lime
2 T chopped cilantro or parsley
1 ½ t sugar
½ t curry powder
A Couple of dashes of Tabasco
1 avocado, diced

Take the cucumber pieces and sprinkle with salt and set in a colander to drain. This helps some to remove some of the bitterness that some cucumbers have. Mix pepper, lime zest, lime juice, cilantro, sugar and Tabasco. Pat the cucumbers dry and add to the pepper mix. Finally add the avocado and serve immediately.
