September 4th, 2012Lunch, VegetablesYou can serve these veggies in bread, on top of a salad, or in a crunchy taco shell. I choose a taco ! Spreading the cheese inside the taco makes for a great bite from start to finish.
4 servings (1 serving = 2 tacos)
230 calories per servingGet taco shells and spread the inside with the spread mix – then put in veggies – if more room, add extra chopped lettuce for crunch
Spread:
3.5 oz. goat cheese
¼ c roasted red peppers
1 t chopped chives
1 t liquid from jar of roasted red peppersVeggies:
1 T oil (used in an oil mister, 1 T goes a long way !)
1 t Kosher salt
4 large Portobello mushrooms halved
1 red bell pepper, quartered lengthwise
1 yellow bell pepper, quartered lengthwise
1 small eggplant in ¼ inch slices
4 taco shells
4 lettuce leaves, chopped
PamPreheat broiler. Process all the ingredients for the spread in a food processor and then set aside. Spray a baking sheet with Pam and place mushrooms, peppers and eggplant in a single layer on sheet and spray with oil and sprinkle with salt. Broil 8 minutes, turn, then broil another 5 minutes or until tender. Cool for a bit and then slice up. Spread inside of tacos with the cheese mix and then add lettuce and then veggies.

Avocados are such a favorite of mine. As well as providing MUFAs in your diet they add soooo much flavor to any dish. Here is one of my favorite recipes – it highlights all the creamy goodness of avocados.
Avocado Tacos
6 servings
290 calories per serving12 6 inch tortillas
3 avocados, mashed
1/4 t garlic salt
¾ c chopped cilantro
Pepper to taste
A few drops of Tabasco sauce
12 tomato slices
Lime juiceMix avocados, garlic, pepper, Tabasco and cilantro. Spread the mixture in each tortilla and add 2 tomato slices. Squirt with lime, fold and eat.

Taco Pie

May 23rd, 2012Dinner, Kid Friendly, Mexican, turkeyWhip this up in a flash – save and bake later or bake right away for a super Mexican inspired dinner. Serve with some sliced avocado for a special treat.
6 servings
296 calories per serving1 lb. extra lean ground turkey
2 t dried onion
1 Tbsp. taco seasoning (more if you like your meat zesty and flavorful)
14.5 oz. can diced tomatoes, drained well
12 oz. frozen corn, thawed and drained
4 La Tortilla Factory low carb tortilla wraps (only 80 calories each!)
1 c low fat shredded cheddar cheese
1/4 c light sour creamPreheat oven to 375 degrees. Brown meat with dried onions and taco seasoning then add tomatoes and corn and cook 5 minutes. Spoon 1 1/2 c of the mix into a 2 quart square or round casserole dish. Spread out and then top with 2 tortillas. Add the rest of the meat mix and 1/2 c of cheese. Add 2 more tortillas and the rest of the cheese and cover and bake 25 minutes. Uncover and bake an additional 5 minutes.

October 15th, 2011chicken, Dinner, Kid Friendly, MexicanSuper good – this stacks up to any taco you find out there and the kids love to make these. These tacos really hit the spot.
10 servings
249 calories per serving1 1/2 lb. boneless skinless chicken, cut into bite sized cubes
1t red vinegar
Juice of one half a lime
1/2 t salt
1/2 t pepper
2 cloves garlic, minced
1 t oregano flakes
10 6 inch flour tortillas
1 tomato, diced
1/4 c shredded lettuce
1/4 c shredded Monterey Jack cheese
1/4 c salsa
Pam
1 avocado, slicedSpray a skillet with Pam and cook chicken 6-7 minutes or until done. Mix in vinegar, juice, salt, pepper, garlic and oregano and simmer 5 minutes. Heat tortillas half a minute in microwave. Put chicken mix in tacos and top with cheese, tomato, lettuce and salsa. Top with 2 slices of avocado per taco.

I always find tostados a bit hard to eat – do you crack the tortilla and scoop? Do you pick it all up and eat it like a pizza? For this one, I folded the shell over like a taco
The flavors in this dish mix incredibly well and this is a GREAT lunch.6 servings
280 calories per serving6 6 inch flour tortillas
1 package (1.4 oz) taco seasoning
1 lb. boneless skinless chicken breasts in bite sized pieces
½ c water
2 large tomatoes, chopped
7 oz. shredded non fat cheddar cheese
6 T low fat sour cream
¼ c chopped cilantro
PamPreheat oven to 400 degrees and place tortillas on a cookie sheet and spray with Pam. Sprinkle with 1 t taco seasoning and bake 8 minutes or until tortillas are crisp and golden. Mix chicken with the rest of the seasoning mix and water and bring to a boil in a skillet then simmer 5 minutes or until chicken is done. Add 1 ½ c tomatoes and cook another 2-3 minutes them remove from heat and stir in 1 ¼ c cheese. Place the mix over the heated tortillas and then top with the rest of the tomatoes and cheese.
