Rosemary Chicken with White Beans

This was a perfect meal to serve for guests – tasty, elegant, refined. It was also so perfectly seasoned with the dressing, rosemary and sundried tomatoes. This is one of those recipes that will be made again and again !

1/3 c low fat Italian dressing
4 boneless skinless chicken breasts (3 oz. each)
¼ c water
2 medium carrots, sliced
2 stalks celery, sliced
¼ c chopped drained sun dried tomatoes in oil
1 t rosemary leave flakes
19 oz. cannellini beans, rinsed and drained

Heat dressing in skillet and cook chicken 5 minutes per side or until browned. Reduce heat to medium low and add water, carrots, celery, tomatoes and rosemary then cover and simmer 10 minutes or until chicken is done. Stir in beans and cover and cook 5 minutes or until beans are warm.

Chicken Cobb Salad

Cobb Salads are one of my favorites – there are always lots of good substantial ingredients so you get filled up and the bacon flavor always permeates all the other ingredients. The goat cheese is a nice addition that you usually don’t find in a cobb salad.

4 1/2 c shredded romaine lettuce
1 ¼ c cooked, shredded boneless skinless chicken (Perdue Shortcuts work great here)
2 hard boiled egg (yolks removed and whites chopped up)
1 tomato, chopped
2 T low fat crumbed goat cheese
2 slices turkey bacon, cooked, cooled and crumbled
½ avocado, diced
3 T chopped green onions
½ c fat free ranch dressing

Divide the lettuce on plates, arrange an even amount of each of the ingredients onto each plate and drizzle with dressing.

Stuffed Zucchini

Stuffed zucchinis are a great side dish. You can change up what you ‘stuff’ them with and that makes it easy to pick complementary flavors. This one is great next to Italian flavors and Italian inspired dishes.

2 medium zucchini
½ c onion, diced finely
1 clove garlic, minced
1 t oil
½ c chopped green bell pepper
½ c chopped peeled eggplant
½ c chopped tomato
¼ c Egg Beaters
1 t basil flakes
Salt and pepper to taste
20 Ritz crackers, divided
2 T grated parmesan cheese

Preheat oven to 375 degrees. Slice zucchini in half lengthwise and scoop out the centers leaving just a shell. Reserve 1 c of the insides and chop it up. Heat a skillet and add oil and sauté onion and garlic 4 minutes. Add pepper, eggplant, tomato and zucchini and cook 5 minutes or so. Remove from heat and stir in basil, salt and pepper, and eggs.

Break 15 crackers and stir into the veggie mix and then spoon the mix into the zucchini shells and place on a baking sheet sprayed with Pam. Crush the other 5 crackers and mix with the parmesan and sprinkle over the zucchini boats. Spray the crumbs on top of each of the zucchinis with the butter spray so that they brown a bit. Bake 25 minutes or until hot.

Open Face Eggplant Melts

These are INCREDIBLY good – each piece in and of itself is good, and all put together, it makes an awesome appetizer, lunch or snack ! The balsamic dressing on the eggplant and zucchini make this very special and I recommend you don’t skip that step.

1/2 lb. eggplant cut into 8 slices
1 medium zucchini sliced lengthwise into 8 long slices
1/3 c low fat balsamic vinegar dressing
4 ¾ inch thick slices of Italian bread
3 T low fat mayo
½ t basil flakes
Pepper to taste
1 tomato cut into 8 slices
3 slices part skim ricotta each cut into 4 strips

Spray a cookie sheet with Pam and preheat broiler. Place eggplant and zucchini slices on sheet and brush with half of the dressing then broil 5 minutes, turn, brush with the rest of the dressing, and broil another 5-7 minutes. Place bread slices on a cookie sheet and broil 1-2 minutes to lightly toast. Combine mayo, basil and pepper and spread on bread. Top each piece of bread with 2 eggplant slices, 2 zucchini slices, 2 tomato slices and 3 strips of cheese and broil 1-2 minutes. If the bread you use is not large enough to support 2 pieces of eggplant, zucchini and tomato, cut it down to 1 and lay the cheese across lengthwise rather than crosswise.

Worcestershire Rice

Just adding a bit of tomato and parsley makes brown rice so much more interesting. And the Worcestershire really adds a nice zing !

2 c brown rice, cooked
1 c finely diced tomatoes (I use canned ones here)
1 T Worcestershire sauce
1 T finely chopped parsley
Salt and pepper to taste
1/4 t garlic powder

Combine all and serve warm.

Pesto and Mozzarella Grilled Cheese

Grilled cheesy sandwiches – they make it on this ‘diet’ plan of mine and I am so happy about it ! To make them more sensible, use low fat cheeses, add flavor in the way of herbs, and be sure to use Pam and buttery spray. And then off you go – the variations are endless and here is a great Italian inspired one.

1/4 c low fat pesto
12 1 oz. slices sourdough bread
12 3/4 oz. slices part skim mozzarella cheese
6 1/4 inch thick slices tomato
18 large basil leaves

Spread 1 t pesto on each slice of bread. Top 6 slices of bread with a cheese slice, a tomato slice, 3 basil leaves, and another cheese slice. Top with remaining bread slice. Spray outsides of sandwiches with at least 5 sprays per side. Heat skillet on medium heat and spray with Pam. Add sandwiches, as many as will fit in a batch. Cook 2-3 minutes each side or until cheese is melted. You can use a Panini press here and the cheese will melt even nicer 🙂

Turkey Paninis

Turning a regular sandwich into a Panini makes it much more special – and all you are doing is grilling it up and pressing it a bit to melt down all the contents really well. A have a Panini pan that goes right on the stovetop – I also have a George Foreman type grill, but I like doing it stovetop better.

4 t pesto (get the prepared version from the refrigerator section of your grocer)
8 1 oz. slices sourdough bread
8 oz. deli turkey (low fat Sara Lee or Hormel prepackaged works great here)
2 oz. thinly sliced provolone cheese
8 slices tomato

Combine mayo and pesto and spread 1 T on each of 4 slices of bread. Top each slice with turkey, 1.2 oz. cheese, 2 tomato slices and the rest of the bread. Preheat grill pan and spray with Pam. Spray each sandwich with a few spritzes of the ICBINB Spray and add sandwiches and cook 3 minutes per side.

Zucchini and Tomato Salad

Most don’t think to use zucchini in its raw state – but it is marvelously crunchy and mellow and a great addition to salads. This salad is mainly zucchini and it’s really tasty.

1 garlic clove, minced
2 T red vinegar
1 T fresh chopped parsley
1/4 t salt
1/4 t black pepper
1/4 c oil
2 1/4 c thinly sliced zucchini
1 1/2 c grape tomatoes, halved
1 T fresh chopped basil

Combine garlic, vinegar, parsley, salt and pepper. Add oil and whisk well. Add zucchini and tomatoes and toss gently. Sprinkle with basil just before serving.

Turkey Sandwich Lunch Platter

Quick, easily portable and a great lunch. If you gotta have mayo instead of mustard, then use low or no fat and reduce the light ranch dressing.
