Grape Salad

This is one of those dishes that has everyone at the table making yummy noises 🙂 The cinnamon and cardamom are a FANTASTIC addition to the grapes. And the yogurt is really just a way to get the spices to stick to the fruit. The gingery goodness of the cardamom really makes this dish so be sure to add it in. Serve it as a dessert, a snack or a side dish.

¼ c low fat vanilla yogurt
1/8 t cinnamon
1/8 t cardamom
1 c seedless green grapes halved lengthwise
1 c seedless red grapes halved lengthwise

Combine yogurt, cinnamon and cardamom – then mix in grapes and toss to coat. Cover and chill.

Fruit Crisp

It doesn’t get much simpler and this is one of those recipes that is really versatile – use any canned fruit or even some apples and you get a great warm, homey dessert in no time.

2 15 oz. cans peaches in juice, drained
5 graham crackers, coarsely crushed (1 c)
1/3 c flour
3 T brown sugar
½ t cinnamon
¼ c cold margarine or butter, cut up into pieces
2 c low fat vanilla yogurt

Preheat oven to 375 degrees and spread peaches in a 8 inch square baking dish. Mix crumbs, flour, sugar, cinnamon and then using a pastry blender, cut in butter until the mix is the consistency of coarse crumbs then sprinkle them over the peaches and bake 25-30 minutes then cool slightly and serve with yogurt.

Grapefruit Mousse

Because of the egg white contribution to this recipe, it almost tasted more like a thinner meringue than it did a mousse. But whatever the name, it was creamy, grapefruity and sweet yet tart.

½ c 2% cottage cheese
¼ c low fat vanilla yogurt
3 T grapefruit juice
2 T honey
1/8 t kosher salt
2/3 c sifted powdered sugar
¼ c egg whites
1 c plus 2 T chopped fresh or jarred grapefruit pieces (drained well)
1 t mint leaves for garnish

Process cottage cheese, yogurt, juice, 1 T honey and salt in a blender until smooth. Beat powdered sugar and egg whites to stiff peaks (about 7 minutes). Fold cheese mix with egg whites and 1 c grapefruit – do not over mix or the fluffiness will deflate. Mix remaining 2 T grapefruit with 1 T honey for a garnish. Divide mouse into cups and garnish with grapefruit mix and mint.
