Vegetable Burritos

This is one of those recipes where you just don’t miss the meat – not one bit ! Roasting the veggies first gives them a great flavor, then you add chili powder, then you add rice simmered with chipotle for the smoky flavor and then you add CHEESE ! This is a satisfying, perfect lunch.

Salt and pepper to taste
1 1/3 c water
½ c brown rice
1 T minced canned chipotle in adobo sauce
4 bell peppers cut into thin strips
4 medium carrots thinly sliced
1 T oil
1 T chili powder
6 oz. fresh spinach leaves thinly sliced
4 10 inch burritos
¾ c low fat shredded Monterey Jack cheese
½ c salsa (optional)

Preheat oven to 450 degrees. Bring water to a boil and add rice and 1 t salt along with the diced chipotle. Cover and cook 45 minutes then remove from heat and let stand 15 minutes. Toss pepper, carrots, oil and chili powder in a baking pan and roast about ½ hour then add spinach and toss. Warm tortillas and add rice, cheese and veggies and wrap. Serve with salsa.

Very cheesy, very veggie – this is a veggie dish that will really get the kids eating up !

1 can 26 oz. Light Cream of Chicken Soup
2/3 c low fat sour cream
1/2 t pepper
1/2 t onion powder
10 oz. frozen veggie mix (carrots, cauliflower, broccoli), thawed
6 oz. frozen green beans, thawed
1 medium zucchini, chopped
1 c shredded Swiss cheese
1 c Stovetop stuffing mix

Preheat oven to 350 degrees. Mix soup, sour cream, onion powder and pepper then stir in veggies, 1/2 c cheese. Turn into a 2 quart baking dish. Cover and bake 40 minutes. Stir and then top with the rest of the cheese and the stuffing mix and bake 5 minutes uncovered.

Spring Rice and Veggie Salad

This is very different from your typical mac salad ! Instead of pasta, this recipe uses rice and adds some nice fresh Spring veggies. What a great dish to serve at your next barbecue !

4 c cooked minute rice (white or brown) – after cooking , cool to room temperature
1 c halved grape tomatoes
1 c fresh asparagus spears (cut into 1 inch pieces), boiled 3 minutes then rinsed in cold water
3/4 cup light mayo
1 T Dijon mustard
1 T chopped parsley
Juice of one lemon
Grated zest of one lemon
Salt and pepper to taste

Mix all ingredients well and serve. (you could also chill this and then serve – but I like it best room temperature)

Greek Veggie Salad

Some time the best thing about a salad is all the stuff OTHER THAN the lettuce. So this one takes out the lettuce and leaves all the good stuff leaving you with a perfect serving of delicious veggies. If you don’t have Greek vinaigrette around the house, use any vinaigrette and add a splash of lemon and some oregano.

3 large tomatoes, chopped
1 medium cucumber sliced
½ c kalamata olives
½ c low fat Greek vinaigrette dressing
¼ c low fat crumbled feta cheese

Mix veggies and add dressing and toss to mix well.

Veggie Stir Fry

Stir fry is a nice way to add a veggie side dish without it being a green salad or just a can of veggies opened up and heated. They don’t take much time (especially if you buy pre-chopped veggies at your supermarket). And I like that you can throw in just about anything and easily change it up – try adding some baby corn, or water chestnuts or bean sprouts (all available in the canned in the Asian section of your market) and you have a whole new dish – the same sauce still works !

¼ c chicken broth
1 T orange juice
1 T soy sauce
1 ½ t cornstarch
1 ½ t grated ginger root
3 cloves garlic, minced
¼ t red pepper flakes
1 ½ c small cauliflower florets
1 c julienned carrots
1 c zucchini, halved and thinly sliced
¼ t salt
¼ t pepper
½ t garlic powder
2 t chili garlic sauce (available in the Asian section of your market)

Stir broth, juice, soy and starch together and set aside. Spray a large skillet with Pam and heat on medium high – then add ginger, garlic and red pepper flakes and cook 30 seconds or so. Then add cauliflower and cook 2 minutes. Then add carrots and cook another 2, then add zucchini and cook 2 more. Stir in the broth mix and bring to a simmer then cover, add the chili garlic sauce and cook 1 minute or until the sauce is thick and turns glossy.

Veggie Salad

Often times the best thing about a salad is not the lettuce, but all the other stuff ! And this salad agrees 🙂 No lettuce – – just all the good veggies in a great lemony dressing. If you have extra broccoli, throw it in. If you are out of celery, don’t’ sweat it ! Make this salad anything you want 🙂

1 yellow bell pepper thinly sliced
1 large cucumber, peeled and thinly sliced
2 stalks celery, diced
2 large carrots, shredded or sliced
6 radishes, sliced
1 T chopped parsley
2 T lemon juice
1 T oil
½ t garlic powder
Salt and pepper to taste

Toss tomato, cucumber, celery, carrots, radishes and parsley. Combine juice, oil, salt, pepper and garlic and mix well and then pour over salad and serve immediately.
