Yogurt Pie

I’ve been making this recipe for years, and my Mom for years before that. It is always a great summer time treat that even yogurt non-likes find tempting and delicious. Sometimes I take the filling and make ice pops out of it rather than placing in a pie crust. No matter how you slice it, you will love this pie !

200 calories per serving

1 prepared low fat graham crust
20 oz. can crushed pineapple, drained well
8 oz. tub Cool Whip lite, thawed
6 oz. non fat lemon yogurt (don’t substitute – you need the lemon flavor to bring some tang to the pie)
6 oz. non fat yogurt – any flavor
Some fruit for garnish

Mix all ingredients and place in the pie crust. Cover and freeze at least 5 hours. Defrost 10-15 minutes before serving. If the pie has been frozen longer than over night, you may need to defrost 20 -25 minutes before serving.

Cheesy Eggs and Sausage Breakfast

When you are on a 400 calorie a meal plan, you don’t have to shy away from breakfast. In fact, you can have quite a plate of food for only 265 calories !!! That even leaves room for more toast or eggs or sausage – but, believe me, this plateful is quite filling just like it is 🙂

2 turkey sausage patties cooked according to package instructions (100 calories)

1 slice wheat toast (45 calorie per slice bread) with 1 T buttery spread (45 calorie pet T)

1/2 c egg beaters scrambled (spray pan with Pam) and during the last minute of cooking, add 1 Laughing Cow light cheese wedge that has been cut into little cubes (it will melt pretty fast)

Creamy Cheesy Chicken

Creamy and cheesy this is ! The Swiss cheese in this made for a very mellow flavor that mixed very well with the chicken and broccoli. But I’m sure that any other flavor would do very well. This is one of those great recipes where you have everything incorporated – a protein, a starch and a veggie.

3 c (6 oz.) uncooked wide egg noodles
2 t oil
1 lb. boneless skinless chicken breasts cut into bite sized pieces
3 c frozen broccoli florets
1 t minced dried onion
1 t onion powder
½ c white wine
1 can condensed cream of celery soup
1 c (4 oz.) shredded Swiss cheese
2 t Dijon mustard
Salt and pepper to taste

Cook noodles according to package instructions. Heat oil and add chicken and cook 4-5 minutes or until browned. Add broccoli, onion flakes and onion powder and cook 4 minutes or until hot then reduce heat and stir in wine. Cover and cook 4-5 minutes or until chicken is done. Add noodles, soup, cheese, mustard, salt and pepper and cook until cheese is melted and all is hot.

Pineapple and Orange Dream Cake

Light and refreshing is the best way to describe this elegant and tempting cake. This is an easy to make dessert that tastes like you spent hours preparing, but it only take a bit of time to put it together 🙂

CAKE:
1 box yellow cake mix
¼ c applesauce
4 eggs
1 11 oz. can mandarin oranges (including the juice)

FROSTING:
8 oz. cool whip lite
1 3.4 oz. package instant vanilla pudding
1 15.5 oz. can crushed pineapple in juice (not syrup), mostly drained

Preheat oven to 350 degrees and mix all the cake ingredients until moist then beat by hand 2 minutes. The oranges will all break up – that is fine. Spray a 13×9 pan with Pam and pour in the batter and cook 30-40 minutes or until a toothpick comes out clean. Cool completely before frosting. Mix together all frosting ingredients and spread on the cake. Store cake in the frig.

Grilled Marinated London Broil

If you let this marinate overnight, the meat will be that much more tender and flavorful ! I often plan these for entertaining – they are so easy to do so very savory. They get a nice seared crisp outer layer which tastes just grate with the soy marinade.

1 lb. lean London broil
2 T minced garlic (jarred is fine)
2 T soy sauce
1/2 c water

Place meat in a zip loc. Add remaining ingredients, zip up and mush it all around so all the meat gets covered. Let sit overnight. Heat a grill to high and sear the meat for 3 minutes each side then lower temperature and then cook to desired doneness. If you do not have access to a grill, you can also quick brown this in a large skillet sprayed with Pam and then finish cooking until desired doneness in a hot oven (375 degrees or more).

Beef and Tomatoes over Fettucine

This was much like eating pepper steak over pasta. The flavors mingled together well and this was a very tasty twist on a beef stir fry.

2 c uncooked FiberGourmet fettucine noodles
1 T oil
1 c frozen stir fry pepper and onions
1 lb. thinly sliced beef
14.5 oz. canned diced tomatoes, undrained
1 t garlic powder
¼ t pepper
½ t salt
Fresh basil leaves, chopped

Cook pasta according to package instructions. Heat oil and meat 5 minutes then stir in peppers and onions and cook 3-6 minutes, stirring frequently. Then mix in tomatoes, garlic, salt and pepper and cook 2 minutes. Stir in pasta and cook 2 minutes to heat through. Garnish with basil.

Garlicky Oven Fries

Oven fries can get very dry – but with a few tricks, they are delicious and you won’t even be missing your fried fries. First, use some chicken or vegetable broth to give the potatoes some moisture. You can even add a little extra during the cooking process to keep the potatoes moist. And then at the very end, spray with I Can’t Believe It’s Not Butter spray for a buttery flavor and much added moisture.

½ c chicken broth
1 t garlic powder
1/8 t pepper
4 medium baking potatoes, scrubbed, and cut lengthwise into shoestring potato size
Pam
ICBINB Spray
Kosher salt

Preheat oven to 400 degrees. Combine broth, garlic powder and pepper and add potatoes and toss. Spray baking sheet and arrange potatoes in a single layer and bake 40 minutes or until crisp and golden. Stir several times during the baking process. If you want them a little browner, broil for 2-3 minutes at the end of the cooking process. When you remove them from the oven, spray with ICBINB Spray and sprinkle with salt.

Dulche de Leche Rice Pudding

You can serve this pudding warm or chilled. It is rich and creamy and ever so decadent. It’s good without the caramels melted in – – then you do that step and it gets taken to a whole other level. You must try ! 🙂

I am sure you could bring down the calories using buttery spread instead of butter, Splenda instead of sugar, Fat Free evaporated milk instead of whole – – but this dessert just deserves all the ingredients that give it its creamy goodness.

2 c water
½ c uncooked rice
¼ c sugar
1 ½ cinnamon sticks
1 T butter
Dash of salt
12 oz. evaporated milk
8 caramels
1 T coarse sugar
1/8 t kosher salt

Combine the first 6 ingredients in a saucepan and bring to a boil then reduce the heat and simmer 20 minutes or until all the water is absorbed. Stir in the evaporated milk and bring to a boil again then lower the heat and simmer 10 minutes or until it is thick and creamy then add the caramels and stir until melted. Take out the cinnamon sticks and throw them out, then spoon the pudding into desert dishes. Combine sugar and salt and sprinkle over the pudding just before serving.

Caramel Popcorn

This has a subtle sweetness that builds with each bite rather than a thick, in your face coating of sweet on the popcorn. It’s a great alternative to kettle corn and at only 90 calories per serving, eat up !

2 T margarine
2 T honey

Preheat oven to 325 degrees. Spread popcorn in a large pan. Melt margarine and honey and pour over the popcorn and bake 10 minutes stirring often. Let cool then store in an airtight container.

Pasta Dinner

Thanks to FiberGourmet pasta – I can have a whole plate of food like this – and that makes me feel satisfied. Hunger is definitely gone after a plateful like this.

The first part about ‘dieting’ that kills me is the so so small portions of pasta you get – – that is until I found FiberGourmet. You can order it off their website at www.fibergourmet.com or you can get it on Amazon.

Because of it, I can sit down to a plate like this for UNDER 425 CALORIES !! And my daughter is oh so happy to have ‘pasta night’ back again 🙂
