This goes together in no time and you can grab a shower while it bakes. This is a great weekend breakfast and is a perfect dish to serve breakfast to lots of people with ease.

1 ½ c Egg Beaters
½ c skim milk
3 ½ c frozen O’Brien hash brown potatoes
1 1/3 c shredded low fat cheddar cheese, divided
4 T crumbled cooked bacon
½ t salt
¼ t pepper
¼ t garlic powder
½ t onion powder
¼ t chili powder
4 green onions, chopped

Preheat oven to 350 degrees. Whish egg and milk and stir in potatoes, 1 c cheese, 2 T bacon and spices. Pour into a 8 inch square baking dish sprayed with Pam. Bake 45-50 minute or until a knife comes out clean then sprinkle with the rest of the bacon and cheese and cook 3-5 minutes longer to melted the cheese. Garnish with green onions.

Asian Shrimp Soup

This is a great quick soup that does not skimp on flavor. I usually add in a teaspoon of Asian chili garlic sauce to spice it up, but it is just as good without it. If you know you are having a heavier dinner, this makes a great light lunch with a piece of garlic toast or a cheesy bagel on the side.

4 c chicken broth
¼ c shredded carrot
2 c bok choy, coarsely chopped
¼ c water chestnuts, chopped
2 oz. sliced mushrooms
2 oz. popcorn (or other small) shrimp, cooked
2 T soy sauce

Bring broth to a boil and add carrots, bok choy, water chestnuts and mushrooms. Simmer 4 minutes then add shrimp and soy and heat through.

Roasted Garlic Potato Salad

Just one more, just one more ! That’s what you’ll be saying after you have a few bites of this warm potato salad. The flavors were outstanding and it’s a nice dish next to fish or chicken.

2 lb. small new potatoes, quartered (about 20)
2 T oil
1 bulb garlic
1 t oil
½ c sliced green onions
2 T white balsamic vinegar
¼ t salt
¼ t pepper
2 T oil
¼ c sliced olives
¼ c sun dried tomatoes, drained and cut into thin strips

Preheat oven to 450 degrees. Put potatoes in a baking dish and drizzle with 2 T oil and toss then roast 10 minutes and stir. Cut the top off the bulb of garlic (DO VIDEO) and remove any loose paper skin and then cut side up in a baking cup and drizzle with 1 t oil. Cover with foil and place in oven and continue roasting 10 minutes. Stir potatoes and add onions and continue baking another 15 minutes or until potatoes and garlic are tender. Let stand until garlic is cool enough to handle. Squeeze out garlic cloves and mash with vinegar, salt and pepper then whisk in 1 T oil. Mix in the olives and tomatoes with the potatoes and then add the dressing and toss to coat.

Tilapia with Lemon Pepper

Tilapia is a great white fish that is farmed raised making it widely available in restaurants and grocery stores throughout the US. It cooks quickly, and has a nice texture when quickly pan fried. Even doubling this recipe to 6 oz. leaves you another 200 calories for a filling side dish such as Foiled O’Brien; potatoes and peppers steamed in a foil packet.

3 oz tilapia
Pam
Salt to taste
Lemon pepper to taste (I pile it on!)

Heat a small skillet on medium low and spray with Pam. Place the fish in the pan and sprinkle with salt and lemon pepper. Cook 3 minutes. Gently flip the fish and sprinkle with more salt and lemon pepper. Cook another 3-5 minutes or until fish is done. It is done when the flesh is flaky and opaque rather than translucent.

Tuna on Toast Lunch Plate

This is a nice quick lunch that is satisfying and nutritious. Don’t like pickles? Try chopped celery or onion in the tuna instead. Change up the side vegetable for variety. But I like to keep the tzatziki (dip made of yogurt, garlic and cucumber) for dipping, it’s lo cal and yummy.

1 can solid white albacore tuna packed in water
3 slices pickles (Claussen Burger Slices)
2 ½ T mayonnaise with olive oil
¼ t onion powder
Salt and pepper to taste

4 slices (45 cal each) wheat bread

20 small green olives stuffed with pimento

2 c carrot chips
½ c Tzatziki (store bought) for dipping carrots

Drain the tuna and place in a bowl. Chop pickles into small bits and place in bowl with tuna. Add mayo, onion powder, salt and pepper. Mix with a fork.

Toast bread and put ½ of the tuna mix on each sandwich. Divide olives, carrots and tzatziki among plates.

Refrigerator Pickles

Make your own fresh pickles quickly and easily. These are great to bring along to BBQ’s and a great thing to keep on hand at home – they make great sides to lunches and a great snack for midnight eaters 🙂

There are so many variations you can do just by swapping out different types of peppers, different herbs, etc.

Only 30 calories for a whole cucumber’s worth

Kirby cucumbers cut lengthwise into quarters – depending on size, I can fit 4-5 cucumbers into a jar
3 T kosher salt
2 T sugar
1 1/4 c white vinegar
2 T peppercorns
5 large garlic cloves
16 dill springs
optional – green hot chilies, halved lengthwise

Jars – either mason jars you purchase in the canning section of Walmart. etc. Or just save up some jars from mayo, pickles, etc. and reuse them !

Pack veggies into 2 clean 1 quart glass jars. Mix salt, sugar, vinegar, peppercorns and garlic in another jar. Cover and shake until sugar is dissolved. Add 2 c water and pour over the vegetables. Tuck the chilies and dill in and add enough water to make sure the veggies are completely covered. Close jars and refrigerate over night or for as long as 3 weeks.

Chickpea Salad with Feta Cheese

I’m not a huge fan of plain salads. But when you add lots of fiber (chickpeas) and cheese, then they become special and they do fill you up. This one has both and has a great citrus dressing. Add a few squirts of fresh lime of orange juice to give it even more citrusy taste.

1 15oz. can chickpeas, drained
2 scallions, sliced
1/2 c grape tomatoes, halved
3 T fresh parsley, chopped
3 C bagged salad mix (I like to use a mix of organic greens or mesclun mix)
2 oz. low fat feta cheese
1 t lemon zest
2 T lemon juice
1 t oil
1 garlic clove, minced
1/4 t salt

Mix zest, juice, oil, garlic and salt. Add chickpeas, tomatoes, scallions, parsley and salad and toss well to coat. Sprinkle with feta and serve.

Egg Drop Soup

This egg drop takes just 5 minutes to prepare and makes a great lunch portion. Pair it with a salad or sandwich for a nice, filling meal.

3 cups fat free chicken broth
1 large egg
1/2 T soy sauce
2 T fresh chives, chopped
1/2 c sliced mushrooms
1 c water
Salt and pepper to taste

Mix all except egg in a saucepan. Bring to boil. Beat egg lightly and when broth is at a boil, slowly spoon in egg. Serve immediately.

Curry Chicken

This steamy Indian inspired dish has just the right amount of curry. Pair it up with a vegetable side dish such as Ginger Steamed Carrots.

3/4 lb. boneless skinless chicken cut into cubes
2 t oil
1/2 c onion, chopped
1/4 c celery, chopped
3 cloves garlic, minced
2 T wheat flour
1 c chicken broth
1/2 c canned diced tomatoes, drained
1/2 t Worcestershire sauce
1-2 t curry powder
¼ – 1/2 t cayenne pepper (depending on how spicy you like it)
1/4 c chopped cilantro
Salt and pepper to taste

Add salt and pepper to chicken cubes. Put 1 t oil in skillet and cook chicken 4-6 minutes or until browned. Lower the heat and cook 4 more minutes then remove from pan. Heat pan to medium and add oil, onion, celery and garlic. Cook 5 minutes. Stir in flour and add broth and cook 5 minutes or until thickened up. Stir in tomatoes, Worcestershire, curry and cayenne. Add chicken back to skillet along with salt and pepper and simmer 3 minutes. Remove and sprinkle with cilantro.
