Beef and Broccoli Casserole

Make this casserole and watch it disappear ! The is good old all American food and it feeds a crowd !

24 oz. broccoli, cut into small florets (about 6 cups)
2 T oil
1 1/2 pounds extra lean ground beef
1 large onion, chopped
2 T Worcestershire sauce
1 t garlic powder
1 t onion powder
Salt and pepper to taste
4 c skim milk
1/3 c cornstarch
2 c shredded low fat sharp Cheddar cheese
1/4 teaspoon ground turmeric
4 c frozen hash browns or precooked shredded potatoes
1 large egg, lightly beaten
1/2 t pepper
Pam
1/4 t paprika

Preheat oven to 450 degrees. Mix broccoli florets with 1 T oil and toss to coat them lay on a baking sheet and cook 15 minutes, stirring once halfway through. Heat 1 T oil in a skillet and add onion and sauté 3 minutes then add beef and cook 10 minutes or until beef is browned. Be sure to break up the clumps of beef as it cooks. Add Worchestershire, garlic powder, onion powder, salt and pepper and spoon into a 9×13 baking dish then top with the broccoli.

Whikh milk and starch and bring to a boil on medium high heat. Cook until bubbly and thick, about 8 minutes. Remove from heat and add in cheese, salt and turmeric. Pour over the beef and broccoli.

Mix potatoes, egg, salt and pepper and spoon over casserole. Spray the top with a bit of Pam so it will brown nicely and bake 45 minutes or until brown. Sprinkle with paprika and serve.

Greek Veggie Salad

Some time the best thing about a salad is all the stuff OTHER THAN the lettuce. So this one takes out the lettuce and leaves all the good stuff leaving you with a perfect serving of delicious veggies. If you don’t have Greek vinaigrette around the house, use any vinaigrette and add a splash of lemon and some oregano.

3 large tomatoes, chopped
1 medium cucumber sliced
½ c kalamata olives
½ c low fat Greek vinaigrette dressing
¼ c low fat crumbled feta cheese

Mix veggies and add dressing and toss to mix well.

Salsa Black Bean Soup

This was so super delicious ! It rivals any restaurant soup out there ! I made it without the cheese and it was so incredibly tasty that you did not miss it at all.

1 t oil
1 T minced garlic
2 c water
1/2 t chipotle chile powder or 3 t chipotle sauce
2 15 oz. cans black beans, rinsed and drained
1 (8-ounce) bottle salsa
1 T lime juice
1/2 c chopped cilantro
1/2 c shredded Monterey Jack cheese

Heat oil and sauté garlic 1 minute. Stir in water, chipotle, beans and salsa. Bring to a boil then reduce heat and simmer 1 minute. Remove 2 c of the mix and put in a blender and puree. Then put back in the pan and simmer 15 minutes. Then add the juice and cilantro and simmer 3 more minutes. Sprinkle with cheese just before serving.

Ham and Provolone Melt

Placing these in the oven for 10 minutes transforms these from good sandwiches to GREAT sandwiches. All the flavors combine so nicely and the garlic and pepper give it just a little bite. These are definitely in my top 10 sandwiches !

1 Arnold Sandwich Thin bun
4 slices thin sliced deli ham (Oscar Mayer pre-packaged meats are great)
1 slice low fat provolone cheese
1 T olive oil
½ clove garlic, minced
Salt and pepper to taste
1 slice tomato
½ green pepper in thin slices

Preheat oven to 350 degrees. Mid together garlic, oil, salt and pepper. Place ham, peppers and tomato on bun. Drizzle with garlic and oil mix and top with cheese. Wrap sandwich in foil and bake 10 minutes.

Grilled Cheesesteak Sandwich

Try serving with some celery and carrot stix on the side. If you use 45 calorie per slice bread, you can really BEEF up on the beef 😉

Make sandwiches. Spray skillet with Pam and heat. Spray outside of each slice of bread with 5 spritzes of ICBINB Spray. Grill 3 minutes each side.

Tuna Casserole

Everyone loves a good tuna casserole. This one tastes great and is way lower in the calorie department than my regular recipe. It gets skinnied up by using a slim milk and broth based sauce rather than a creamier version. The results are great !

8 oz. whole wheat egg noodles
1 medium onion, chopped finely
8 oz. sliced mushrooms
½ t salt
¼ t pepper
½ c chicken broth
6 T flour
3 c skim milk
12 oz. can chunk light tuna in water, drained well
1 c frozen peas, thawed
1 c finely shredded parmesan cheese
½ c panko breadcrumbs

Cook noodles according to package directions. Preheat broiler.

Heat a skillet and spray with Pam. Then cook onions 5 minutes. If they start to dry out, add a tablespoon or so of hot water. Add mushrooms and cook another 3 minutes. Add wine and continue cooking until liquid is evaporated, about 4 minutes then add milk, salt and pepper. Sprinkle peas with flour and mix to coat. Add to mushroom mix with tuna and half of the parm. Stir in the noodles. Place in a baking dish and sprinkle with crumbs and the rest of the parm. Broil 3-4 minutes until bubbly and top is brown.

Sprinkle the casserole with breadcrumbs and the remaining 1/2 cup Parmesan. Broil until bubbly and lightly browned on top, 3 to 4 minutes.

You can also prepare this ahead and then sprinkle with the breadcrumbs and cheese last minute, cover and bake at 350 degrees for an hour or so, taking off the cover the last 10 minutes to brown the top.

2 16 oz. packages frozen French cut green beans, thawed
1 can low fat cream of mushroom soup
8 oz. Velveeta, cut into ½ inch cubes
1 1/2 c hot water
1/4 c butter
8 oz. stuffing mix (I like Stove Top)

Heat oven to 350 degrees. Mix beans and soup and place in a baking dish then top with cheese. Mix water and butter and melt butter all the way. Stir into stuffing and then spoon that over the casserole. Bake 40 minutes.

This is a great combination of an empanada and a pita – the recipe is fun to make and is a great healthy alternative to traditionally fried empanadas. You can easily change this up and use leftover pork or turkey instead. And you can even make it a bit more authentic by adding some sofrito to the mix. This was a great meal !

2 6½-inch whole wheat pitas
1 c Tangy Salsa (see recipe below – or you can sub a store bought salsa)

For filling:
2 c canned low-sodium black beans, rinsed
2 c frozen broccoli, corn, and pepper vegetable mix, thawed
2 c grilled boneless, skinless chicken breast, diced (Perdue Shortcuts work great here !)
½ c shredded low-moisture part-skim mozzarella cheese
¼ c sofrito tomato cooking base (in the Goya section of your market) – optional
1 T fresh cilantro, chopped
2 T scallions, sliced
Salt and pepper to taste

For Tangy Salsa (22 calories per serving):
½ c jarred roasted red peppers, drained and patted dry
½ c no-salt-added diced tomatoes (or substitute 1 medium tomato, chopped)
1 small lime, peeled and cut into small chunks
¼ t ground black pepper
¼ t ground cumin
1 T fresh cilantro, rinsed and chopped

Preheat oven to 400 ºF. Combine beans, vegetables, chicken, cheese, sofrito and seasonings. Mix well.
Cut pitas in half, and open the pockets. Divide filling evenly between the four and place on a nonstick baking sheet, and bake for about 10 minutes until the filling is hot, cheese melts, and chicken is reheated. You can make these a bit ahead of time and heat when ready – this makes it a great recipe for when you are having guests.

For salsa, combine all ingredients and toss well (it is best if you make this ahead and let sit an hour or 20 so let the flavors mingle). Serve each empanapita with ¼ cup of Tangy Salsa.

Don’t skimp on the salsa – it really makes the meal ! I added ¼ c lime juice, 1 T sliced scallions, salt and pepper and omitted the roasted red peppers. The lime pieces add such a nice fresh flavor !!

Ham, Broccoli and Rice

This couldn’t be easier and it turns out a great healthy meal that the whole family will enjoy. I love one dish meals ! If you don’t have leftover ham on hand, try using Canadian bacon.

2 t margarine
½ c chopped onion
4.3 oz. package of long grain and wild rice mix
1 2/3 c water
2 c frozen broccoli florets
1 ½ c diced cooked ham
1 cup shredded low fat cheddar cheese

Melt margarine in a skillet on medium heat and cook onion and rice from the mix for 2-3 minutes them pour in water and seasoning packet and bring to a boil. Reduce heat to medium low, cover and cook 10 minutes then lay broccoli and ham over the rice and bring back to a boil before lowering heat to medium low. Then cover and cook another 10-15 minutes or until rice is tender. Uncover and add cheese to top – let simmer 5 minutes to melt cheese. Serve immediately.

Rich, decadent, creamy goodness – this has a great cream cheese / cheesecake flavor while screaming CHOCOLATE !! It makes a great special occasion dessert.

1 Oreo crust
1 c nonfat cottage cheese
½ c Egg Beaters
12 oz. Nefchatel (low fat cream cheese) at room temperature
1 c sugar
½ c unsweetened cocoa
¼ c flour
1 t vanilla
¾ c powdered sugar
¾ c nonfat sour cream

Preheat oven to 300 degrees. In a blender or food processor, mix cottage cheese and eggs until smooth. In another beat cream cheese and sugar with a mixer until smooth and then add the cottage cheese mix, cocoa, flour and vanilla. When smooth pour into the prepared pan. Bake 60-65 minutes or until set. Cool 15 minutes and then cover and chill 4 hours. Just before serving, combine the sour cream and powdered sugar and spread over the top of the cake.
