Chicken Tetrazzini

Mark this down as another of those recipes that you will make again and again. Some of the noodles get a little crunchy from the oven and it makes the dish that much more enjoyable. Tetrazzini is usually made with spaghetti, but I like using fettucine noodles sometimes !

400 calories per serving

7 oz. FiberGourmet pasta (fettuccine noodles or spaghetti) – without FiberGourmet pasta, this dish will not come in under 400 calories !

¼ c margarine
¼ c flour
½ t salt
¼ t pepper
1 c chicken broth
3/4 c heavy cream
¼ c skim milk
2 T water
1 ½ lb. cooked chicken in bite sized pieces (Perdue Shortcuts work great here!)
1 can sliced mushrooms
½ c parmesan cheese

Heat oven to 350 degrees. Cook pasta according to package instructions. Melt margarine on low heat and stir in flour, salt and pepper and stir constantly until smooth and bubbly then remove from heat. Stir in the broth and cream and then heat to boiling stirring constantly and cook 1 minute. Then stir in water, pasta, chicken and mushrooms. Put into a baking dish and sprinkle with cheese and bake ½ hour.

These are FABULOUS ! Serve as a breakfast muffin, for brunch, for lunch, or even as a dinner side. They are quite versatile – add or remove spices to make these taste just how you like them 🙂

6 slices thin bacon, chopped (I use the precooked version and totally skip the frying step)
10 cloves roasted garlic, chopped finely (don’t substitute raw garlic)
3 eggs
3/4 cup buttermilk Bisquick
1 1/2 T chopped parsley
2 c shredded low fat mild cheddar cheese
Salt and Pepper to taste

Preheat oven to 350 degrees. Spray muffin pans with Pam. Fry bacon and remove to a plate with a slotted spoon. Beat eggs and stir in Bisquick, parsley, cheese, bacon, salt, pepper and garlic and spoon into muffin tins. Bake 10-15 minutes or until lightly brown. Cool before removing from pan.

Tomato and Mozz Panini

Another from the stable of easy grilled cheese sandwiches – I do so many in the very similar way of cooking – but each is stuffed with different types of ingredients and gives you a whole different taste treat. This one is like easting a Caprese Salad.

1 Arnold sandwich thins roll (only 100 calories!)
4 thin slices of tomato
3 oz. low fat mozzarella, thinly sliced
1 T basil, chopped
Salt and pepper to taste
Pam
ICBINB Spray

Place cheese on bottom bun, then add tomatoes and finally basil. Sprinkle with salt and pepper and close sandwich and spray each side with a few squirts of ICBINB Spray. Spray a hot skillet with Pam. Heat each side of the sandwich 2-3 minutes or until golden and cheese is melted.

Pasta and Brie (Baltimore International College)

To me, there is nothing more heavenly on my tongue than a melting morsel of brie. Now add in that I am a carb hound and cannot live without pasta…follow me to Pasta and Brie courtesy of Baltimore International College School of Culinary Arts. This recipe is PERFECT !! It combines 2 of my most favorite things in the world. I don’t know who at the Baltimore International College School of Culinary Arts came up with this recipe, but it outranks any pasta and cheese recipe that I have ever tried. It is true heaven.

Along with the perfect brie flavor, the fresh herbs and pine nuts are just a flavor explosion. This is definitely one of those meals that will impress…and it’s not hard to put together at all.

I tweaked their version just a bit to bring this in under 400 calories. It’s a bit high on the calorie count, so serve as a side to a light piece of fish – or have it for lunch. The portion size is definitely enough for a filling lunch and you won’t forget the cheesy brie goodness.

4 oz. brie (I removed the coating but you don’t have to)
1 T olive oil
3 T chicken broth
15 oz. can diced tomatoes, drained
2 t minced garlic
1 T chopped parley
4 basil leaves, sliced thinly
1 oz. pine nuts, toasted
Salt and pepper to taste
6 oz. FiberGourmet pasta (penne, rotini or short fettuccine) – without FiberGourmet, you have to add 80 calories per ounce of pasta)

Heat oil and broth and add in the tomatoes. Add in the garlic, parsley, basil, nuts, salt and pepper. Simmer for 10 minutes. Cook pasta according to package instructions. Stir brie into tomato mix and mix well to melt then pour it over the pasta and serve immediately.

So much flavor !!! And I just love using cucumber instead of lettuce on a sandwich. This is a great lunch.

4 slices thin deli sliced lean ham (Oscar Mayer pre-packaged meats are great)
4 slices thin deli sliced lean turkey (Oscar Mayer pre-packaged meats are great)
2 T low fat crumbled feta cheese
4 thin slices cucumber
3 kalamata olives, slices (or black olives)
1 T low fat balsamic vinaigrette
¼ t oregano flakes

Place meats on roll. Top with cucumbers. Combine cheese, olives and dressing and pour over sandwich. Sprinkle with oregano.

Fettuccine Alfredo

A dish that many order in a restaurant – but you can do it for so many fewer calories at home…and it tastes great !

12 oz. FiberGourmet fettuccine (I used their tomato flavored fettuccine)
2 t buttery spread
1 t oil
3 cloves garlic, minced
¼ c finely chopped red bell pepper
¼ c sliced green onions
¼ c chopped parsley
1 T flour
12 oz. can fat free evaporated milk
½ t basil flakes
¼ t oregano flakes
Salt and pepper to taste
¼ c parmesan cheese

Cook pasta according to package instructions. Melt spread and oil in a skillet. Cook garlic on medium high heat for one minute then add pepper, onions, parsley and flour and cook another minute. Gradually add milk and blend and bring to a boil stirring constantly. Cook 5 minutes or until sauce thickens. Remove skillet from heat, stir basil, oregano salt and pepper and then toss with pasta. Sprinkle with cheese and serve immediately.

Mini Pizzas

Easy as pie and so much better for you then the predone ones you get in the freezer section. These take just a moment to prepare and are done cooking in 3-4 minutes. You just can’t go wrong with this crowd pleaser. Serve as an appetizer, lunch, or a quick after school snack !

6 mini bagels
1/4 c pizza sauce
1 t oregano flakes
1 t basil flakes
3/4 cup part skim shredded mozzarella cheese

Preheat broiler. Split the bagels and toast them lightly. Then spread with sauce and sprinkle with spices. Finally add the cheese and then broil 3-4 minutes to melt cheese. Add some crushed red pepper if you like it spicy !

A great sandwich that doesn’t send you over the top with calories – tasty, filling, and a great portable lunch.

Chicken Salad with White Beans

FLAVOR EXPLOSION ! There are tons of bold flavors in this salad and dressing – and they mix to perfection ! Feta cheese, mustard, orange, radicchio, basil, feta cheese, sun dried tomatoes – – all mingling together to serve up a big, bold salad.

Vinaigrette
1 clove garlic, chopped and mashed
¼ teaspoon salt
4 T oil
6 T orange juice
¼ c vinegar
1 T Dijon mustard

Salad
15 oz can cannellini beans, drained and rinsed
2 ½ c diced cooked chicken breast (Perdue Shortcuts work great here !)
2 c diced zucchini
1 ½ c cups diced celery
¼ c crumbled low fat feta cheese
¼ c chopped, sun-dried tomatoes (rinse them off in water and dry them with a paper towel first)
1 c coarsely chopped basil
Salt and pepper to taste
2 c torn escarole or romaine
2 cups torn radicchio

Mash garlic with ¼ t salt and then whisk in the oil. Add juice, vinegar and mustard and whisk to combine. Add more salt if necessary. Prepare all salad ingredients and toss with dressing. Season with salt and pepper.

Easy Caprese Panini

Caprese is a style of salad made with tomatoes, basil and mozzarella – here we place it all in a sandwich and heat it up so that all the flavors intensify.

1 T prepared low fat pesto
2 tomato slices
2 oz. part skim mozzarella cheese
3 large basil leaves
ICBINB Spray
Pam

Spread pesto inside roll and add tomato, cheese and basil. Spray the outsides of the buns with a few spritizes of ICBINB spray. Spray a pan with Pam and heat to very hot. Add sandwich and grill2 minutes. Flip and grill another 2-3 minutes.
