Broccoli Casserole with Cheese

What a great way to serve broccoli ! Just a little bit of crunch from the topping, creaminess from the soup and cheese – – all over a great broccoli dish full of vitamins and fiber.

2 10 oz. packages frozen chopped broccoli, thawed and drained
1 can low fat cream of mushroom soup
2 t lemon juice
½ c crushed seasoned stuffing
1 T low fat margarine, melted
¼ c shredded low fat cheddar cheese

Preheat oven to 350 degrees. Put broccoli in an 8 inch square baking dish sprayed with Pam. Mix soup and juice and pour over the broccoli then mix stuffing crumbs and margarine and sprinkle over the casserole. Cover and bake 30 minutes then uncover, sprinkle with cheese, and bake 5 minutes or until cheese is melted.

Italian Combo

This is a hearty sandwich – lots of meat, a great cheese and a nice filling roll. If you pack it for lunch, just pack the dressing separate and drizzle on last second.

1 club roll (club rolls are small sub/hero rolls)
4 thin slices deli ham (Oscar Mayer pre-packaged meats are great)
15 slices turkey pepperoni
1 slice low fat provolone cheese
Chopped lettuce or a leaf of romaine lettuce
2 thin tomato slices
1 T fat free balsamic vinaigrette

Put all ingredients on roll and drizzle dressing over the top.

Three Cheese Risotto

Does making risotto scare you? It scares me ! Especially after watching Hell’s Kitchen with Chef Gordon Ramsay screaming at everyone that they can’t get the risotto right 😉

Queue up “Rocky” music….Plentiful Pantry has come to the rescue – and now you can be a winner whenever you make risotto ! Their Three Cheese Risotto mix could not be any easier to prepare. Just add water, simmer, add cheese and you have PERFECT risotto.

It’s creamy, elegant, moist, cheesy, and so very flavorful. I think next time I am going to add some sauted mushrooms in for a beautiful Mushroom Risotto. The box makes 6 servings and it comes out to 140 calories per serving.

Turkey and Brie Sandwich

The arugula on this sandwich is the perfect pairing to the creamy brie and the sweet apples – it gives it just the right amount of contrast. This is one of my top 10 sandwiches of all times ! Brie+ turkey+apple+arugula=YUMMY !

4 slices 45 calorie whole wheat bread

6 oz. thinly sliced turkey breast (deli meat)
3 oz. brie
¾ c baby arugula
1 apple, sliced
Heat brie in microwave 15 seconds or so to soften it and then spread on 2 pieces of bread. Top with turkey, apples and arugula and finish making the sandwich. Spray a heated pan with Pam. Spray outsides of sandwich with a couple spritzes of butter spray and cook 2-3 minutes per side in a hot skillet or a total of 3-4 minutes in a Panini press.

4 oz. lean deli roast beef, thinly sliced
1 slice low fat swiss cheese
1/3 c spinach leaves
1 slice red onion
½ T horseradish
½ T light mayonnaise

Mix mayo and horseradish and spread on bun then top with meat, cheese, spinach and onion.

Penne with Spinach

This is a great ‘white pasta’ dish – the ricotta, parmesan, spinach and garlic just work so well together. And when you add in the toasted pine nuts, the flavor meter goes off the charts. You definitely have to try this one !!

4 oz. whole wheat penne pasta (if you use FiberGourmet pasta, the calories drop by 60 calories per serving !)
6 oz. fresh or frozen spinach
½ c part skim ricotta cheese
2 T shredded parmesan cheese
1 t lemon zest
¼ t kosher salt
½ t pepper
2 T toasted pine nuts

Cook pasta according to package instructions adding frozen spinach to the water the last 2 minutes. If using fresh spinach, put spinach in colander and drain pasta over it. Put pasta in bowl with spinach and stir in cheeses, lemon, salt and pepper. Plate and add pine nut garnish.

Turkey and Feta Wrap

Wraps are a nice change from a sandwich – and they hold in the contents so much better than 2 slices of bread. Here is a standard turkey, bacon and tomato sandwich and because it is on a wrap you can add in some crumbled feta and avocado slices without worrying about them flying out the sandwich. And the avocado adds your MUFA for the meal 🙂 Enjoy !

1 T low fat crumbled feta cheese
1 Whole wheat wrap (80 calorie version by Smart and Delicious)
¼ c shredded lettuce
4 slices deli turkey breast
1 slice tomato, cut into strips
2 slices turkey bacon, cooked
¼ c avocado slices
Pepper

Sprinkle turkey with pepper. Place it all in the wrap and roll it up ! Here is a video that will show you how to fold up a wrap securely

Goat Cheese and Mixed Nut Salad

This is definitely not a boring salad ! And it would transport really well – so mix it up, put it in a container and dress it just before serving.

2 c mixed salad greens
5 grape tomatoes, halved
2 mushrooms, sliced thinly
Salt and pepper to taste
2 T dry roasted mixed nuts, chopped
¼ c crumbled goat cheese
2 T fat free balsamic dressing

Place greens in a bowl and sprinkle with salt and pepper. Add all other salad ingredients. Drizzle with dressing.

Chicken Parm with Pasta

This is one of my favorite dishes, but the restaurant version will kill you with calories. This one has been lightened up quite a bit – it comes in at only 324 calories and that includes a generous side of pasta (thanks FiberGourmet!!)

4 4 oz. boneless skinless chicken breasts
Water
1/2 c bread crumbs
¼ c parmesan
½ t garlic powder
½ t oregano flakes
½ t parsley flakes
Salt and pepper to taste

¼ c shredded low fat mozzarella cheese
½ c marinara sauce for chicken (Paul Newman’s is good)
1 ½ c marinara sauce for pasta
2 T parmesan
6 oz. FiberGourmet penne, fettucicine or rotini pasta

Preheat broiler. Spray a 9×13 baking dish with Pam. Mix breadcrumbs with ¼ c parmesan cheese. Mix herbs and spices. Rinse chicken breasts in water and then sprinkle with herb mix before dipping in breadcrumbs to coat. Press crumbs into the chicken so they stick well. Lay chicken in pan and sprinkle with any remaining bread crumbs.

Broil 6 minutes, turn and lightly spray the tops with Pam (so they will brown nicely) and then broil another 6 minutes. Meanwhile cook pasta according to package instructions. Heat 1 ½ c sauce (for pasta) in microwave or on stovetop. When pasta is done, drain, mix with sauce and sprinkle with 2 T parmesan cheese.

Remove chicken from oven and cover with ½ c sauce and sprinkle with mozzarella cheese. Turn off broiler and turn oven to 350 degrees. Place chicken back in oven 5-7 minutes or until cheese is melty.

Sausage and Potato Breakfast Pizza

It’s all your favorite breakfast ingredients all in one convenient package – breakfast pizza is a great way to start the morning ! Leftovers reheat well in a skillet or in the toaster oven.

8 oz. can low fat crescent rolls

12 oz. turkey breakfast sausage
1 c frozen shredded hash browns, thawed
1 c shredded fat free cheddar cheese
¼ c skim milk
½ t salt
¼ t pepper
8 oz. Egg Beaters
2 T grated Parmesan cheese

Preheat oven to 375 degrees. Spray a 12 inch pizza pan with Pam. Separate dough and then press together to form a round crust. This works best if you let the dough come to room temperature. Cook sausage until browned, crumbling it as you go. Top dough with drained sausage, potatoes and cheese. Mix milk, salt, pepper and Egg Beaters and pour over sausage mix. Sprinkle with cheese and bake 25-30 minutes or until crust is browned.
