Onion and Potato Pancakes

These are great served for breakfast, lunch or dinner – the cooked onions added in with the potatoes makes for a really great dish with lots of taste.

1 bag Oreida Steam and Mash Potatoes (24 oz)
5 t oil
2 onions, finely chopped
3 T low fat sour cream
¾ t salt
¼ t pepper
1/8 t nutmeg
3 T flour

Heat the potatoes according to package instructions. Heat 1 t oil in skillet and add the onions and sauté 7-9 minutes until golden and tender. In a large bowl mash the potatoes with the sour cream, salt, pepper and nutmeg. Stir in the cooked onions and make 8 cakes. Heat 2 t oil on medium heat. Dredge the 8 cakes in the flour and sauté half the batch for 3 minutes or until crusty. Flip and cook another 3 minutes. Repeat with the second batch.

Chewy Coconut Bars

This has just a small bit of cake to hold together the yummy coconut, nuts and raisins. It’s a perfect dessert with just a hint of sweetness.

2 eggs
18 packets Equal
¼ t maple flavoring
½ c margarine, melted
1 t vanilla
½ c flour
1 t baking powder
¼ t salt
1 c coconut, finely chopped
½ c chopped walnuts
½ c raisins
Pam

Preheat oven to 350 degrees. Beat eggs, equal and maple flavoring. Mix margarine and vanilla. Combine flour, baking powder and salt and stir into egg mix. Add coconut, walnuts and raisins. Spray an 8 inch square baking pan with Pam. Spread mix in pan and bake about 20 minutes or until a toothpick inserted comes out clean. Cool on wire rack and then cut into 16 bars.

Parmesan Pork and Penne

This is a meal that the family was raving about…there was much satisfaction around the dinner table the night I made this one ! Even though it is a very quick sauce, it grabs the flavor from the pork and quickly becomes a sauce full of depth. Be sure to add on the fresh herbs – they really add to the awesome flavor of this dish.

8 oz. FiberGourmet penne pasta
3 T bread crumbs
3 T grated parmesan cheese
¾ lb. pork tenderloin sliced thinly
2 t oil
Pam
14.5 oz. can diced tomatoes, undrained
14.5 oz. can diced tomatoes, drained this time
8 oz. tomato sauce
2.25 oz. can sliced black olives, drained
Salt and pepper to taste
½ t basil flakes
½ t oregano flakes
½ t parsley flakes
Salt and pepper to taste
2 T fresh chopped basil

Cook pasta according to package instructions. Combine breadcrumbs and cheese in a zip loc bag then add the pork slices and shake. Heat oil in skillet and also spray it with Pam and then cook pork 4-6 minutes or until browned on both sides. Add tomatoes, sauce, salt, pepper and olives and bring to a boil the reduce heat to low and simmer 10 minutes or until pork is tender. Serve pork mix over cooked penne. Garnish with fresh chopped basil.

Caribbean Chicken

This recipe makes a nice mellow flavored meal full of Caribbean richness and warmth. Try serving with a tossed green salad and some rice.

¼ c minced onion
1 T sugar
1 T finely chopped jalapeno pepper (seeds removed)
2 t cider vinegar
2 t soy sauce
½ t salt
½ t ground allspice (or a mix of ground cloves and ground nutmeg)
½ t thyme
½ t pepper
¼ t red pepper flakes
1 ½ lb. boneless, skinless chicken thighs

Combine all except chicken and Pam in a large bowl. Add chicken and toss well to coat. Heat a grill pan (or the BBQ grill in the backyard !) on medium high heat and spray with Pam. Cook 5 minutes per side or until done.

Cocoa Popcorn

This is barely sweet – much more of a cocoa flavor than a sweet flavor and yet it definitely satisfied my sweet tooth. This is a great sweet snack for in front of the TV.

6 c popped popcorn
1 T margarine
2 T light corn syrup
1 T unsweetened cocoa powder
1 ½ T skim milk
1/8 t salt

Preheat oven to 350 degrees. Place popcorn in a large baking pan and warm in the oven. In a small pan melt margarine, then add syrup, cocoa, milk and salt and stir until well mixed. Pour over popcorn and stir to coat all pieces.

Pumpkin Cobbler

Take Autumn and put it in a dish – this is just what it tastes like !! I just can’t tell you how good this was – it was simply divine ! Everyone who tasted it wanted more. The buttery crumbs on top were way better than any pumpkin pie crust I have ever had – it adds a whole new dimension to this dessert.

This recipe includes a simple marinade that makes the steak taste like a million bucks ! You’ll never grill a naked steak again !

½ c steak sauce
½ c low fat balsamic vinaigrette
2 cloves garlic, minced
1 t oregano flakes
1 t onion powder
2 beef rib eyes (total 1 lb.)

Mix all ingredients other than the meat and reserve ¼ c for later use. Place the meat in a zip loc along with the sauce, mush it around so the sauce coats the meat evenly, then refrigerate for 30 minutes (or up to a couple hours). Heat grill and cook steak 4-5 minutes per side or to desired doneness. Serve topped with extra sauce.

Chocolate Banana Parfaits

This is like having a banana split, but without the ice cream ! The rich pudding mixed with the whipped cream is just fabulous. Add bananas and nuts, and you have a real winning dessert for just 76 calories per serving ! Go ahead, have 2 servings 🙂

1 c Cool Whip, thawed
1 large banana, thinly sliced
1 T sliced almonds

Prepare pudding according to package instructions using skim milk and refrigerate until set. Divide half of the pudding between 6 parfait glasses or goblets. Use half the cool whip to make a thin layer atop the pudding in each glass. Top with a few banana slices and repeat the three layers. Sprinkle with almonds, cover and refrigerate until ready to serve.

Cook bacon according to package instructions. Spray pan with Pam and heat – make sure pan is good and hot on medium high heat. Make sandwich of the bread, bacon and cheese. Spray outsides of the sandwich with 5 sprays each of ICBINB. Place in pan and cook 1-2 minutes or so each side or until brown and cheese is melted.

Rice Krispie Treat with Chocolate and Peanut Butter

One would think you could not improve on the perfectly edible Rice Krispie Treat. But when you introduce peanut butter and chocolate you end up with a divine dessert that satisfies with richness, just the right amount of sweetness, and good old ‘snap, krackle and pop’. This is Rice Krispie treats for the adult crowd !

4 c mini marshmallows
1/3 c creamy peanut butter
½ t kosher salt
6 c Rice Krispies

12 oz. semisweet chocolate chips, melted
¼ c chopped roasted, salted peanuts

Butter an 8×8 baking dish with 1 t of the butter (insert your hand into a baggy and use that as a glove to get good coverage). Mix marshmallows, peanut butter, butter and salt and cook on medium heat until all is melted then add cereal. Spray a spoon with Pam so the contents don’t stick to it and use it to press HALF of the mix into the buttered pan. Spread half the chocolate over the mix and then repeat the 2 layers. Finally sprinkle with peanuts.
