Beef Stroganoff Topped Potatoes (Crock Pot)

This serves up a super scrumptious stroganoff and serving it atop potatoes is a nice change from the typical noodles.

1 medium onion, chopped
1 ½ lb. boneless beef round steak cut into strips
2 4.5 oz. jars of Green Giant Sliced Mushroom and Garlic, drained
2 t beef boullion crystals
2 T water
1 t garlic powder
1 t onion powder
Salt and pepper to taste
6 medium baking potatoes
8 oz. low fat sour cream
1 T flour
1 T ketchup
Chopped parsley for garnish

Layer onion, beef and mushrooms in the crock pot. Combine beef boullion, salt, pepper, spices and water and pour over beef mix. Cover and cook on low 8-10 hours. An hour before serving, cook baked potatoes (LINK TO RECIPE). Mix sour cream, flour and ketchup and stir into beef mix. Place heat on high and recover and cook another 10 minutes. Cut potatoes in half lengthwise and loosen the pulp with a fork. Spoon beef mix over potatoes and sprinkle with parsley.

Pot Roast (Pressure Cooker)

Pot Roast is just a special dish – it is so homey and so inviting. I love the way the meat gets so super, super tender. If you don’t have a pressure cooker, you can cook this stove top in Dutch Oven for 2 hours at a low simmer. But if you have a pressure cooker, then definitely try this recipe in there – the pressure cooker method adds even more flavor to an already fantastic dish.

1 lb. beef round steak ½ inch thick (thin London broil), cut into 4 pieces
2 T oil
6 large carrots, in 2 inch pieces
6 small new potatoes, halved
1 large onion, peeled and cut into wedges
1 t rosemary flakes
1 t thyme flakes
¼ t salt
¼ t pepper
½ t garlic powder
¾ c fat free beef broth
2 T flour
¼ c water

Heat oil in pressure cooker and brown meat on both sides. Remove and set aside. Add onions and cook for 5 minutes. Add carrots, potatoes, herbs, salt and pepper and then add the beef back. Pour the broth over the mix. Lock lid, bring to pressure and cook ½ hour. Quick release the pressure and remove meat and veggies to a platter and keep warm. Mix flour and water and stir into broth and cook until thickened and serve over meat.

If you don’t have a pressure cooker, do this stove top in a dutch oven and for the final cooking period, cook 2 hours on a low simmer.

Sirloin Kabobs

You know the drill – if you’re using the grill, throw out the skewers and use a grill basket instead – it saves time, aggravation and the food turns out even better ! The meat in this dish is sooooo tender from marinating for hours in the tomato and vinegar based sauce.

2/3 c chili sauce
½ c beef broth
½ c balsamic vinegar
2 T canola oil
5 t Worcestershire sauce
4 t dried minced onion
1 clove garlic, minced
½ t ground mustard
¼ t salt
1 lb. boneless sirloin cut into cubes
16 baby bella mushroom caps, halved
2 medium red onions cut into wedges
2 medium red bell peppers cut into chunks
1 medium yellow bell pepper cut into chunks

Mix the first 9 ingredients and pour half of the mix into a zip loc bag. Add the beef cubes and mix around. Pour the rest of the mix into another bag and add the veggies and mix around. Refrigerate both bags 1-4 hours. Heat a grill pan or basket on the grill and spray with High Heat Pam. Drain the veggies and meat reserving the extra marinate for later basting. Grill 7-10 minutes or to desired doneness stirring and re-basting occasionally.

If you don’t want to grill this, you can preheat the broiler and place all on a baking sheet sprayed with Pam. Broil 5-6 minutes, turning half way through.

Herbed Flank Steak

The red wine really helps tenderize this steak – it was so very delicious. Serve with Sauteed Peppers and Onions for a great meal. Leftovers make a great addition to a cold salad – just slice thinly and toss with greens and dressing.

2 lb. flank steak
¼ c Dijon mustard
¼ c dry red wine
1 large shallot, finely chopped
2 T oil
2 T fresh basil
1 T fresh oregano
1 T fresh thyme
1 t salt
½ t pepper
½ t garlic powder

Score meat with diagonal, shallow cuts and place in a zip loc. Mix the rest of the ingredients and pour into the bag, mix around well, seal and refrigerate 4-24 hours. Heat grill and cook meat 9 minutes each side or until desired doneness. Slice thinly across the grain.

Salisbury Steak

This is a favorite of frozen dinner makers and I still remember the taste of good old Swanson TV Dinner Salisbury Steak. This one is much better ! The recipe is easy to make and gives you a great result time in and time out. Try serving with 1/2 c mashed potatoes and some Roasted Grape Tomatoes and you meal comes in under 400 calories !

½ c skim milk
14 fat free saltines, crushed
2 T dried minced onions
2 t parsley flakes
1 lb. lean ground beef
12 oz. fat free beef gravy
2 T ketchup
2 t Worcestershire sauce
¼ t pepper

Preheat oven to 350 degrees. Mix milk, crackers, onion, and parsley and then add the meat and make into 4 oval patties and place in a baking dish sprayed with Pam. Whisk gravy, ketchup , Worcestershire and pepper and pour over the meat and cook 55 minutes or until meat is done.

Grilled Chili Rubbed Sirloin

Flavorful with or without the sauce ! Grilled London Broil is one of my favorites, but sometimes it lacks flavor because it is a lean cut. This recipe puts all the flavor back in…and then some !

1 lb. boneless sirloin steak
1 ½ T chili seasoning (or a mix of chili powder, garlic powder and onion powder)
¼ t pepper
Pam
½ c water
1 T balsamic vinegar
1 t instant coffee
1 ½ t Worcestershire sauce
¼ t salt

Sprinkle meat with chili seasoning (go heavier on the seasoning if you wish – it adds miniscule amounts of calories) and pepper and then spray with Pam. Use short little sprays so you don’t blow the dry ingredients off the meat. This makes a nice spicy ‘paste’ and keeps the meat from sticking to the grill. Heat grill and cook meat 6-10 minutes per side or until desired doneness. Alternately heat a skillet and cook steak 6-10 minutes or until desired doneness. Remove from grill or pan and tent with foil and let stand 5 minutes. Combine water, vinegar, coffee and Worcestershire and add to small pan and cook until reduced to ¼ c (about 5 minutes). Slice steak thinly and drizzle with sauce.

Cuban Beef

The sauce on this actually makes the beef taste and feel ‘light’. We had our doubts about serving citrus with beef, but the tangy and citrusy flavor combines well with the beef and this is definitely a recipe I will do again ! Serve with a great big salad for a great meal.

10 oz. filet mignon
Salt and pepper to taste
1 c fresh orange juice
2 T lime juice
½ c black beans
1/4 c Steamed brown rice

Heat skillet to med high. Put in 2 1/2 oz filet mignon and cook to desired doneness. Remove from heat and add salt and pepper. (or you can grill the meat and it still tastes great!). Add orange juice and lime juice to skillet and simmer. Slice the steak and serve over 1/2 c warm black beans and steamed brown rice. Drizzle with the citrus mixture.

Coffee and Steak

Coffee used in meat marinades adds a great depth of flavor. This one combines some sugar, so the flavors really STICK to the meat well and that makes it all the more tasty !

1 t Splenda brown sugar

Heat a grill pan on medium high heat (or heat up the grill in the backyard !). Coat pan with Pam. Combine all the spices and rub into steaks. Cook 4 minutes per side or until desired doneness.

There’s nothing like a hot bowl of stew on a cold night. This one is packed with goodness and tastes so very yummy !

1 lb. lean steak (sirloin, London broil, filet, etc.) cut into 1 inch cubes
8 oz. sliced mushrooms
2 c green beans
2 large carrots, peeled and sliced
1 lb. potatoes, peeled and cut into 1 inch cubes (about 1 very large)
1 can (14 oz.) fat free beef broth
1 can (14 oz.) fat free beef gravy
¼ t garlic powder
1/8 t onion powder
Salt and pepper to taste
2 garlic cloves, minced
2 t olive oil

Heat pan to medium high heat and then add oil. When oil is hot, add beef. Sprinkle with garlic powder, onion powder, salt and pepper. Cook beef until browned on all sides, about 4 minutes. Add garlic and cook for another 5 minutes on medium heat, stirring occasionally. Add broth, gravy, and carrots. Bring to a boil. Then cover and cook 45 minutes on low heat. Add potatoes and cook another 30 minutes. Add green beans and cook a final 15 minutes.

Alternately, you can add all at once and crock pot this meal on low 5-6 hours – but the veggies will not be as crisp.
