December 27th, 2011Asian, Dinner, Kid Friendly, SoupsThis is more like an asian noodle bowl with a bit of broth than it is a soup with some noodles. It is filling and scrumptious.
4 servings
290 calories per serving1 T oil
1 T minced garlic
1 T bottled or fresh grated ginger
1 t lemon pepper seasoning
2 c water
28 oz. chicken broth
1 lb. chicken breast tenders, cut into bite-sized pieces (Perdue Shortcuts or leftover chicken pieces work great here !)
4 oz. uncooked fine (spaghetti-like) asian rice noodles (I use Japanaese Somen rice noodles)
1/4 c cilantro, chopped
1 T lime juice
1 t lemon zest
1/2 t salt
1.4 t pepper
2 scallions, thinly slicedHeat oil and sauté ginger, garlic and lemon pepper 3 minutes. Then add water and broth and bring to a boil. Add chicken, zest and pasta and cook 4 minutes then remove from heat and stir in cilantro, juice, salt, pepper and scallions. Let stand 5 minutes for flavors to mingle. If you like it spicy, add 1 t of hot chili and garlic sauce (available in the Asian section of your market).

I think this is the Mexican version of leftover soup – a bit of salsa, a bit of hominy, a bit of chicken, a bit of cilantro – - and all seasoned with cumin, that wonderful spice that makes it taste so rich.
4 servings
194 calories per serving4 c fat free chicken broth
15.5 oz. can white hominy, drained
¾ c tomatillo salsa (often called salsa verde)
2 c shredded cooked chicken breast
1 ½ t cumin
½ c chopped fresh cilantroMix broth, hominy and salsa and bring to a boil. Toss chicken with cumin and add to broth and simmer 10 minutes. Place in bowls and garnish with cilantro.

If you use Perdue Chicken Shortcuts, the prep on this is 5 minutes – that’s it ! And it tastes like you spent hours putting it together – it is a very spicy, super flavorful and highly nutritious meal. Don’t serve to the kids with the chili sauce in it, but if you are adventurous, try 2 t instead of 1 ½ of the chili sauce – -it makes it a kickin’ hot soup

2 c shredded cooked chicken (Perdue Shortcuts work great here !)
2 t soy sauce
1 1/2 t chili sauce with garlic (available in the Asian section of your food market)
2 1/2 c frozen broccoli stir fry mixCombine broth, chicken, soy and chili sauce. Cover and bring to a boil and then add vegetables and return to boil. Remove from heat and serve immediately.

This soup uses up leftovers and is super simple to put together. You can always add extra fresh or dried herbs to make it as spicy as you like. I just sent some of this over to my sick soon to be sister-in-law. Hope it makes her all better

202 calories per serving3 ½ quarts water
2 c tomato soup
6 oz leftover grilled chicken, cut into small cubes
1 c shredded carrots
1 c green beans, trimmed
1 c small potato cubes
1 c white beans (canned)
1 onion, sliced
1 c celery, thinly sliced
1 c leftover roasted tomatoes or canned diced tomatoes
½ c grated parmesan cheese
2 t dry chicken bouillon powder
½ t garlic powder
½ t onion powder
Salt and pepper to tastePlace all in a pot and bring to a boil. Lower heat and simmer for 45 minutes.
