Hamburger Soup (Crock Pot)

This is so tasty – it’s something I have made many times and everyone who eats it is always delighted with the great heartiness and warmth. Beings this is a crock pot recipe, you can start this one before work, come home, drop in the noodles and in 20 minutes you’ll have a healthy soup ready to go. Serve with some low fat biscuits or some Cheesy Spirals.

1 lb. extra lean ground beef
1 medium onion, chopped coarsely
1 stalk celery in slices
1 package Lipton dry Beef Mushroom soup mix
14.5 oz. can of diced tomatoes
6 c water
½ t salt
¼ t pepper
1 t onion powder
1/2 t garlic powder
2 c frozen mixed vegetables, thawed and drained
1 c uncooked fine egg noodles

Brown ground beef and drain thoroughly. Combine all ingredients except the noodles and frozen veggies in the crock pot, cover and cook on low 6-8 hours. 20 minutes before serving add thawed veggies and noodles and mix well. Increase heat to high, recover and cook another 20 minutes.

This is rich and savory and a perfect lunch soup for a cold winter day.

1 can water
½ can low fat cream of mushroom soup
3 c low fat chicken broth
5 oz. cooked boneless, skinless chicken breast cubed (Perdue Shortcuts work great here !)
1 6.5 oz. can sliced mushrooms and their juice
½ c frozen mixed vegetables (peas, corn, carrots, etc.)
Salt and pepper to taste
½ t onion powder
½ t garlic powder
1 t parsley flakes
4 oz. whole wheat egg noodles
4 T fat free half and half

Combine water, soup, broth, chicken, mushrooms and juice and spices and bring to a boil. Add vegetables and bring back to a boil. Add noodles and cook 5 minutes or until tender. Lower to a simmer and add half and half and cook a few moments longer.

Beef and Noodle Soup

Spicy low cal soup really hits the spot – especially when you have beef chunks AND noodles ! This one really tides you over and it is so easy to do.

½ lb. extra lean ground beef
3 ½ c water
14.5 oz. can diced tomatoes with green chiles, undrained
1 c frozen mixed vegetables
1 t beef bouillon flavoring
2.8 oz. package beef flavored ramen noodles

Brown beef and drain then add water, tomatoes, veggies, bouillon flavoring and flavoring packet from the ramen noodles and bring to a boil. Break up ramen noodles and add to soup and cook 3-5 minutes then serve.

Chicken Pot Pie

The chicken pot pie lover in the house called this one a keeper 🙂 Using a predone crust makes this so very easy to do and the cream cheese mixed in with the gravy makes for a very tasty meal.

1 lb boneless skinless chicken breasts, cut into cubes
¼ c Kraft light zesty Italian dressing
1 oz. low fat cream cheese, cubed
2 T flour
½ c chicken broth
10 oz. mixed frozen vegetables, thawed
1 refrigerated pie crust

Preheat oven to 375 degrees and in a skillet cook the chicken and dressing 2 minutes. Add cream cheese and cook and stir until melted. Add flour and mix well then add broth and vegetables and simmer 5 minutes. Pour the mixture into a deep dish pie plate and place a 10 inch pie crust on top. Flute the edges and cut 4 slits in the crust for venting. Bake 30 minutes or until golden brown.
