Turkey Slaw-Wich

A quick sandwich to throw together that doesn’t taste like a boring sandwich ! The slaw gives it a nice twist.

½ c coleslaw blend (shredded cabbage and carrots)
1 T Miracle Whip
1 t Dijon mustard
2 slices whole wheat bread, toasted
3 slices deli roasted turkey breast
1 slice fat free American cheese

Mix coleslaw, Miracle Whip and Dijon then make sandwiches with all the ingredients.

1/3 c thinly sliced scallions
4 T soy sauce
3 T water
2 c boiling water
1 ½ t sesame oil
¼ t garlic powder
¼ t red pepper flakes
1 3 oz. package low fat ramen noodle soup
2 c boiling water
2 c fresh pea pods, halved crosswise
1 c fresh bean sprouts
1 c sliced mushrooms
8 oz. can baby corn, drained and halved crosswise
1 red bell pepper cut into small strips
3 c shredded Chinese cabbage

Combine green onions, soy, water, oil, garlic powder and red pepper flakes and set aside. Break up ramen noodles and discard seasoning packet. Add peapods and pour 2 c boiling water over the mix and let stand 1 minute and then drain. Combine noodles, pea pods, bean sprouts, mushrooms, corn and peppers in a bowl. Shake dressing and toss with the noodle mix. Cover and chill 2 – 24 hours. Just before serving add cabbage.

Moo Shu Wraps

This is an excellent homemade version of vegetable moo shu that you can get at most Chinese restaurants. Hoisin sauce is available in the Asian section of most markets – be sure not to leave that out, it’s what makes this dish really authentic tasting.

¼ c stir fry sauce
2 t cornstarch
3 c shredded Chinese cabbage / Napa cabbage
2 c fresh bean sprouts
1 c coarsely chopped fresh mushrooms
1/3 sliced green onions
2 medium carrots coarsely shredded
2 medium red bell pepper, in thin strips
16 t hoisin sauce
8 6 inch flour tortillas, heated

Combine stir fry sauce and cornstarch. Spray a skillet with Pam and heat to medium high then add cabbage, sprouts, mushrooms, onions, carrots and peppers and cook 5 minutes. Then add stir fry sauce and cook another 3 minutes. Spread 2 t hoisin sauce on each tortilla and then top each with veggie mix using a slotted spoon so liquid is left in the pan. Roll up each tortilla and serve with extra sauce and green onions.

Zesty Coleslaw

The mustard in the slaw is a nice unexpected flavor – it was not too much, just enough to be interesting without overpowering the dish. How can you beat coleslaw – only 45 calories per serving !

8 c coarsely shredded cabbage
1 large carrot, grated
½ c fat free mayo
2 T white vinegar
2 T pineapple juice
3 T spicy brown mustard
1 ½ T sugar
1/8 t pepper
¼ t salt

Combine cabbage and carrot. In another bowl combine all the rest of the ingredients and then pour over the cabbage and toss well. Chill in the refrigerator.

Lazy Man’s Stuffed Cabbage

I love stuffed cabbage, but it is a major undertaking when you are rolling them all individually. Get the same taste with so much less effort with this great ‘Lazy’ recipe. Here you just make a casserole with layers of all the ingredients and it cuts the prep time down incredibly.

1 lb. extra lean ground beef
1 cup uncooked brown minute rice
1 onion, chopped
1 can diced tomatoes
1/4 c ketchup in mix and 1/2 c for top of casserole
1 medium head of cabbage, sliced
Couple of drops of smoked flavoring (optional)
Salt and pepper to taste
½ t onion powder
Pam

Preheat oven to 375 degrees

Brown meat and onion in a skillet. Drain well. Cut cabbage into small shreds (not so small as coleslaw cabbage, just smallish slices). Add tomatoes, ketchup, smoked flavor, salt, pepper, onion powder and rice to meat. Simmer 2 minutes. If rice needs more water to soak up, add it (last time I made it, it needed about ½ cup added) . Place a layer of cabbage in a large baking pan sprayed with Pam. Cover with a layer of the meat mix. Repeat with a layer of cabbage. Add extra ketchup to the top layer. Bake 45 minutes to 1 hour, until cabbage is tender.
