Green Goddess Dressing

Green Goddess dressing was invented in the 20’s at the Palace Hotel in San Francisco and was quite popular for many years. You don’t see it too often anymore, but it’s a great change from the typical ranch dressing and is a snap to make. This one is lightened up using low fat mayo and rich, thick Greek yogurt and I find it perfect on a crispy lettuce such as iceberg.

2 ½ T = 1 serving

Makes 1 ½ cups

1 c plain fat free Greek yogurt
½ c low fat mayonnaise
2 t Worcestershire sauce
2 t lemon juice
½ t Tabasco
3 canned anchovy fillets
1 clove garlic, minced
2/3 c parsley
¼ c tarragon
¼ c chives
¼ c chervil

Place all the ingredients in a blender and blend well.

Pasta with Clam Sauce

This is just a perfect clam sauce – not too many clams, just the right thickness, just enough spice. Because FiberGourmet makes the calorie count so much lower, you have room for a salad and some garlic toast next to this meal !

8 oz. FiberGourmet fettuccine noodles (without FiberGourmet pasta, you have to add another 80 calories per serving to this)
2 6.5 oz. cans chopped clams
1 T oil
4 cloves garlic, minced
2 T anchovy paste or minced anchovies
2 14.5 oz. cans diced tomatoes
1/3 c tomato paste
¼ c chopped parsley
¼ t pepper
¼ t salt
¼ t garlic powder
¼ t onion powder
2 t lemon juice

Cook pasta until tender, but still somewhat firm. Drain the clams keeping the juice from one can. Heat oil in a pan and cook garlic one minute then mix in anchovies, tomatoes and their juice, tomato paste, parsley, pepper, salt, onion powder, garlic powder and clam juice. Bring to a boil and then reduce heat to low and simmer for 15 minutes. Then add the clams and lemon juice and heat 2 minutes making sure not to come to a boil. Serve sauce over pasta.

Anchovy and Bibb Lettuce

This is sooooo close to my original Caesar Salad dressing and it is just a fraction of the calorie cost due to the reduction in oil and the removal of the egg yolk. This has that biting garlic and anchovy taste that makes a Caesar salad one of the best things on earth !

45 calories per serving

2 anchovy fillets, mashed
2 garlic cloves, mashed
1 ½ t lemon juice
1 T oil
Salt and pepper to taste
1 head Bibb lettuce (Boston, Romain or Green Leaf will also do nicely)
½ c packed parsley leaves

Whisk lemon juice, garlic and anchovies. Add in oil, sugar, salt and pepper. Tear lettuce and toss with dressing and parsley. To make the dressing preparation go quicker, drop the garlic and anchovies in a small food processor and process until well minced. Then add lemon juice, oil, salt and pepper and process until frothy and well mixed.
