Pork Piccata

The lemony piccata sauce is just made for pork ! And this couldn’t be easier to put together – – yet you get a fancy, restaurant quality meal.

1 lb. pork loin in 8 thin slices
2 T flour
1 T oil
1 t cornstarch
½ c chicken broth
3 T lemon juice
3 T chopped parsley
½ t salt

Heat oil in skillet. Dredge pork in flour and add to skillet browning each side. Stir together cornstarch, broth, juice, parsley and salt and add to pan along with pork and simmer 1 minute.

So lemony, so garlicky, so very good and so very good for you !

1 large head broccoli, cut into long florets
2 T oil
10 cloves garlic
½ t red pepper flakes
Salt and pepper to taste
Juice on one lemon

Spray a baking sheet with Pam and heat oven to 450 degrees. Place broccoli and garlic on pan. Sprinkle with red pepper, salt, and pepper and then drizzle with oil. Cook 10 minutes and then stir. Cook another 10-15 minutes. Sprinkle with lemon when you remove it from the oven.

Cuban Beef

The sauce on this actually makes the beef taste and feel ‘light’. We had our doubts about serving citrus with beef, but the tangy and citrusy flavor combines well with the beef and this is definitely a recipe I will do again ! Serve with a great big salad for a great meal.

10 oz. filet mignon
Salt and pepper to taste
1 c fresh orange juice
2 T lime juice
½ c black beans
1/4 c Steamed brown rice

Heat skillet to med high. Put in 2 1/2 oz filet mignon and cook to desired doneness. Remove from heat and add salt and pepper. (or you can grill the meat and it still tastes great!). Add orange juice and lime juice to skillet and simmer. Slice the steak and serve over 1/2 c warm black beans and steamed brown rice. Drizzle with the citrus mixture.

Anchovy and Bibb Lettuce

This is sooooo close to my original Caesar Salad dressing and it is just a fraction of the calorie cost due to the reduction in oil and the removal of the egg yolk. This has that biting garlic and anchovy taste that makes a Caesar salad one of the best things on earth !

2 anchovy fillets, mashed
2 garlic cloves, mashed
1 ½ t lemon juice
1 T oil
Salt and pepper to taste
1 head Bibb lettuce (Boston, Romain or Green Leaf will also do nicely)
½ c packed parsley leaves

Whisk lemon juice, garlic and anchovies. Add in oil, sugar, salt and pepper. Tear lettuce and toss with dressing and parsley. To make the dressing preparation go quicker, drop the garlic and anchovies in a small food processor and process until well minced. Then add lemon juice, oil, salt and pepper and process until frothy and well mixed.

Ham and Scalloped Potatoes (Crock Pot)

Start it in the morning before you leave for work and come home to a great piping hot meal. This is definitely a crowd-pleaser and also makes a great dish when guests are coming – just add a salad on the side and you’re all set !

9 medium potatoes peeled and sliced thinly
1 large onion sliced thinly
½ t salt

Layer in this manner:

½ the cheese
½ the ham
½ the potatoes

Cover and cook on low 8-10 hours or on high 4 hours.

Chicken and Pasta Soup

This soup is prepared a day ahead and refrigerated so that the flavors really mingle. If you want to serve the same day you make it, that works too 🙂

1/2 c cannellini beans
1 lb. chicken breasts, cubed
6 bay leaves
7 c water
1 onion, halved and sliced
1 carrot, sliced thinly
3 ribs celery, sliced thin
Leaves from the tops of the celery stalks
28 oz. diced tomatoes
2 T tomato paste
2 T minced garlic
½ t onion powder
2 t basil flakes
8 oz. FiberGourmet pasta (short alfredo, elbows or rotini)

In a soup pot combine chicken, bay leaves and water. Bring to a boil. Add onions, carrots, celery, celery leaves, tomatoes, tomato paste, onion powder, garlic and basil. Return to a boil and then lower heat and simmer 1 hour. Add beans and remove bay leaves. Refrigerate overnight. The next day heat the broth and cook pasta according to package instructions. Drain and place in soup bowl and ladle soup into each bowl.

10 Layer Beef Hash (Crock Pot)

This is a very hearty meal – and like so many crock pot meals, a great way to put something together, be able to run errands for a few hours – – and then come home to a hot cooked meal. This is reminiscent of a stew with the nice mushroom gravy flavor 🙂

1 ½ lb. lean ground beef
6 medium potatoes thinly sliced
1 medium onion thinly sliced
½ t salt
½ t pepper
15 oz. can of corn, undrained
15 oz. can of peas, undrained
¼ c water
1 can fat free cream of mushroom soup.

Brown the meat in a skillet and drain. Layer the ingredients in the crock in this order:
¼ of the potatoes
¼ the onions
¼ the salt and pepper
½ the corn
¼ the potatoes
½ the peas
¼ the potatoes
¼ the onions
¼ the salt and pepper
½ the corn
¼ the potatoes
½ the peas
All the water
All the meat
All the soup

Cover and cook on high 4 hours. Be sure to give each person a serving that contains some of each layer.

Steamed Potatoes with Garlic Sauce

The garlic sauce makes ordinary potatoes come to life ! And the steaming creates a really nice consistency for the potatoes – almost creamy without being mushy or mealy. This is a great side dish when entertaining.

Water
8 small potatoes, unpeeled
2 heads garlic (whole heads)
2 t skim milk
1 t oil
1 t light margarine
2 t chopped fresh parsley
Salt and pepper to taste

Place a steamer basket in a medium pot and add 1-2 inches of water. Make sure the water does not touch the bottom of the steamer basket – you want the potatoes to steam, not boil. Place potatoes in the steamer basket. Separate the cloves of garlic from the head, but do not remove the paper thin skins then scatter the garlic in with the potatoes. Cover and steam 20 minutes or until fork can be easily inserted into potatoes.

Remove garlic from pan and remove skins by squeezing the garlic up with your fingers and pushing the pulp out. Mash pulp with milk, oil and margarine and warm slightly over low heat. Remove potatoes from pan and cut in half and toss well with the sauce and parsley, salt and pepper.

Coffee and Steak

Coffee used in meat marinades adds a great depth of flavor. This one combines some sugar, so the flavors really STICK to the meat well and that makes it all the more tasty !

1 t finely ground espresso
1 t Splenda brown sugar
¼ t garlic powder
¼ t onion powder
¼ t salt
¼ t pepper

Heat a grill pan on medium high heat (or heat up the grill in the backyard !). Coat pan with Pam. Combine all the spices and rub into steaks. Cook 4 minutes per side or until desired doneness.

Swedish Meatballs (Crock Pot)

I love to make things earlier in the day and then come home to a nice hot meal. The rich sauce makes you barely notice that the meatballs are done with turkey instead of beef.

3 slices bread, cubed
1 c evaporated skim milk, divided
1 T buttery spread
¼ c shallots, minced
½ lb. ground turkey
¼ – ½ c bread crumbs (optional – to bring mix to a dry enough consistency)
¼ c Egg Beaters
½ t salt
½ t pepper
¼ c plus 2 T flour
3/4 c chicken broth
1 T Worcestershire sauce

Mix bread cubes and ½ of the milk and let stand 5 minutes. Melt margarine in a pan and add shallots. Cook 2-3 minutes. Add shallots, meat, egg, salt and pepper to bread. Mix well and if you need it to be drier, add the optional bread crumbs, then make equally sized meatballs. Place ¼ c flour in a bowl and roll meatballs in flour to coat. Place in crock and add broth and Worcestershire. Cover and cook on low 4-6 hours. Mix rest of the flour with the rest of the milk. Remove meatballs to plate and keep warm. Stir milk and flour mix into cooking juices and cover and cook on high 10-15 minutes. Put meatballs back in the pot and serve immediately.
