Cocktail Meatballs (Crock Pot)

These are always a hit at parties and they take no time to prepare. Just keep them simmering in a crock all during the party and you’ll see that they disappear pretty quickly. I like to serve them for dinner sometimes – make a salad on the side and you don’t have to wait for a party to enjoy these little stars !

247 calories per serving (1 serving = 6 meatballs)

22 oz. frozen cocktail meatballs
2 cans fat free beef gravy (sometimes I use one that has onions in it)
salt and pepper to taste
½ t garlic powder
½ t onion powder

Mix gravy and spices. Defrost meatballs in the microwave or in a pan on the stove. Place meatballs in the crock and pour over the gravy. Cover and cook on high until heated through (about one hour). Then move to the low heat setting and you can keep these going another 3 hours while people pick at them.

Mexican Meatballs

A great appetizer – easy to make, smothered in heavenly salsa verde, easy to keep warm in a crock pot, and good to the last bite.

1 1/4 c salsa verde
1 1/2 lb. lean ground beef
1 egg
3/4 c finely crushed tortilla chips
1/2 c minced green onions

Preheat oven to 350 degrees. Mix 3/4 c salsa verde, beef, tortilla chips and onions. Make into 48 meatballs and place on a cookie sheet sprayed with Pam. Bake 15 minutes or until done. Serve with the rest of the salsa verde. Once baked, I usually place in a crock pot and cover with the rest of the salsa verde and this becomes a great party dish that can be kept on low heat to keep warm.

Meatball and Mushroom Soup (Crock Pot)

This did not photograph particularly well – but let me tell you, the meal was DELICIOUS ! You can’t eat this fast enough – you just want more of that awesome broth and the meatballs in your mouth ! You can also use predone turkey meatballs and take a whole lot of the work out of this recipe. Just make sure to do the broth like it says – you won’t be disappointed !

½ lb. ground turkey
½ t garlic powder
½ t onion powder
¼ t pepper
¼ c Egg Beaters
1 T oil
1 c carrots, sliced
2 cloves garlic, minced
2 c sliced mushrooms
1 can fat free beef broth
1 can fat free cream of mushroom soup
2 T tomato paste
Parmesan cheese for garnish

Mix together turkey and seasonings and then add egg and still until well mixed. Make small meatballs and heat in a skillet coated with the oil. Put meatballs in crock and all the rest except the cheese. Cover and cook on low 6-8 hours or on high 3-4 hours. Garnish with Parmesan cheese once in individual bowls.

Mini Meatball Soup

Tasty little meatballs in a aromatic steaming bowl of broth – this makes the whole house hungry as it cooks ! This is one of the best meatball soups I’ve made 🙂

2 t oil
8 oz. sliced mushrooms
3 c coleslaw mix shredded cabbage
1 ½ t oregano flakes
3 cloves garlic, minced
3 c beef stock
2 c chicken stock
4 c water
2 T tomato paste
6 oz. lean ground beef
1 large egg
¼ c grated Parmesan cheese
¼ c bread crumbs
2 T parsley, chopped
½ t garlic powder
¾ t pepper
½ t salt
½ c chopped roasted red peppers
1 c minute rice

Heat oil in a heavy soup pan and sauté mushrooms for 4 minutes. Add cabbage, 1 t oregano and half the garlic. Cook 1 minute more and then add stocks, water and tomato paste. Reduce to medium heat. Mix beef, egg, cheese, bread crumbs, 1 ½ T parsley, garlic powder. pepper, salt, the rest of the oregano and the rest of the garlic. Make meatballs using only 1 teaspoon of mix per meatball, and place them in the broth and simmer about 10 minutes or until mostly done. Add peppers, rice and rest of the parsley. Let sit 6-7 minutes.

This is a very quick soup to make, but it tastes as good as soups that simmer for hours.

12 precooked turkey meatballs ( I use Shady Brook Farms Italian flavor ones)
4 c vegetable broth
2 c water
1/2 c ditalini or orzo (or ¾ c FiberGourmet pasta for the same calories!)
1 14.5 oz. can Italian style diced tomatoes, undrained
2 c diced zucchini
Salt and pepper to taste
½ t garlic powder
¼ t crushed red pepper
1/4 c grated Parmesan cheese
Fresh parsley, chopped

Bring broth and water to a boil. Cook pasta 4 minutes (if you are using the FiberGourmet pasta, add 2-3 more minutes here as the pasta tends to take longer to cook). Stir in tomatoes, zucchini, salt, pepper, garlic powder, crushed red pepper and meatballs. Bring back to boil, then reduce heat and keep at a low boil 7 minutes or until pasta is tender. Garnish each bowl with chopped parsley and 1 T cheese.

Swedish Meatballs (Crock Pot)

I love to make things earlier in the day and then come home to a nice hot meal. The rich sauce makes you barely notice that the meatballs are done with turkey instead of beef.

3 slices bread, cubed
1 c evaporated skim milk, divided
1 T buttery spread
¼ c shallots, minced
½ lb. ground turkey
¼ – ½ c bread crumbs (optional – to bring mix to a dry enough consistency)
¼ c Egg Beaters
½ t salt
½ t pepper
¼ c plus 2 T flour
3/4 c chicken broth
1 T Worcestershire sauce

Mix bread cubes and ½ of the milk and let stand 5 minutes. Melt margarine in a pan and add shallots. Cook 2-3 minutes. Add shallots, meat, egg, salt and pepper to bread. Mix well and if you need it to be drier, add the optional bread crumbs, then make equally sized meatballs. Place ¼ c flour in a bowl and roll meatballs in flour to coat. Place in crock and add broth and Worcestershire. Cover and cook on low 4-6 hours. Mix rest of the flour with the rest of the milk. Remove meatballs to plate and keep warm. Stir milk and flour mix into cooking juices and cover and cook on high 10-15 minutes. Put meatballs back in the pot and serve immediately.

Meatball Parmesan in a Pita

I like my meatballs very spicy, so I add a good amount of red pepper flakes to this one. Prep time is 5 minutes – that’s it !

1 whole wheat pita (140 calorie version)
3 vegetable meatballs
1 T shredded parmesan cheese (shredded, not grated)
3 T marinara sauce
Spices to taste: pepper, oregano flakes, red pepper flakes, garlic powder, onion powder

Slit open the pita. Slice meatballs in thirds and heat meatballs, spices and sauce for 30 seconds in the microwave. Fill the pita with the meatballs, sauce and cheese.

Crock Pot Appetizer Meatballs

Though I usually serve this as a quick and easy appetizer, I sometimes double up the serving and make it a main dish meal. Adding just a few things to bottled sauce can round out the flavors and make it taste much more homemade.

24 Shady Brook Farms turkey meatballs (Italian spiced)
1 jar Paul Newman’s marinara sauce
Garlic powder
Salt and pepper to taste
6 T parsley, chopped
½ c grated parmesan cheese

Place the sauce in a small pan on medium low heat. Add the garlic powder, salt and pepper, parsley and cheese. Simmer for 10 minutes.

If you are going to eat soon, pre-heat the meatballs in the microwave for 5 minutes. Then place in crock with sauce and heat on low for 1 hour. Otherwise, place meatballs in crock pot and pour the hot sauce over them. Cover and keep on low or warm setting for up to 4 hours.
