Vegetable Gratin

This is such a hearty vegetable dish ! The potatoes, parsnips and carrots really satisfy. Serve next to just about anything for a great serving of vegetables.

2 t oil
1 lb. onions, thinly sliced
1/3 c skim milk
1 T cornstarch
1 c fat free chicken broth
¼ t pepper
Salt to taste
½ t garlic powder
½ t onion powder
1 t parsley flakes
¼ t thyme
1 lb. red potatoes cut in 1 inch chunks
6 stalks celery, cut in 1 inch chunks
½ lb. parsnips, sliced
½ lb. carrots, sliced

Spray skillet with Pam, add oil and heat on medium high. Cook onions 25 minutes to caramelize and brown the onions. Add a tablespoon or more of hot water along the way if the onions start to dry out too much. Whisk milk and cornstarch and add to onion skillet along with broth, pepper and thyme. Heat on medium high heat and boil for 1 minute stirring continuously.

Preheat oven to 375 degrees. Combine potatoes, celery, parsnips and carrots. Stir in onion mix and spices/herbs and turn all into a 3 quart baking dish. Cover with foil and bake 45 minutes then remove cover and bake another 15 minutes, until golden and tender.

Mushroom and Zucchini Orzo

I love side dishes the combine a carb with veggies – it’s one less dish to have to prepare. And this one has orzo, which is one of my most favorite small pastas. It’s a perfect side dish !

1 c uncooked orzo

1 c mushrooms, chopped
1 c zucchini, diced
T butter
½ t garlic powder
1/2 t oregano flakes
Salt and pepper to taste

Cook pasta according to package directions. Heat skillet and spray with Pam. Saute mushrooms and zucchini 6-8 minutes. Mix pasta, mushroom mix, butter and spices.

Snow Peas and Mushrooms

This side dish is great next to just about anything ! The flavor is mild and subtle, so it will go well with just about any meal, not just Asian dishes. And for only 83 calories, it’s a smart side.

1 T sesame seeds, toasted
1 T olive oil
1/2 lb. snow peas
4 oz. mushrooms, thinly sliced
2 T teriyaki sauce

Toast sesame seeds by place in a hot dry skillet for 5 minutes, stirring frequently. Heat oil and sauté snow peas and mushrooms 4 minutes. Stir in teriyaki and sesame seeds.

Broccoli Casserole with Cheese

What a great way to serve broccoli ! Just a little bit of crunch from the topping, creaminess from the soup and cheese – – all over a great broccoli dish full of vitamins and fiber.

2 10 oz. packages frozen chopped broccoli, thawed and drained
1 can low fat cream of mushroom soup
2 t lemon juice
½ c crushed seasoned stuffing
1 T low fat margarine, melted
¼ c shredded low fat cheddar cheese

Preheat oven to 350 degrees. Put broccoli in an 8 inch square baking dish sprayed with Pam. Mix soup and juice and pour over the broccoli then mix stuffing crumbs and margarine and sprinkle over the casserole. Cover and bake 30 minutes then uncover, sprinkle with cheese, and bake 5 minutes or until cheese is melted.

Goat Cheese and Mixed Nut Salad

This is definitely not a boring salad ! And it would transport really well – so mix it up, put it in a container and dress it just before serving.

5 grape tomatoes, halved
2 mushrooms, sliced thinly
Salt and pepper to taste
2 T dry roasted mixed nuts, chopped
¼ c crumbled goat cheese
2 T fat free balsamic dressing

Place greens in a bowl and sprinkle with salt and pepper. Add all other salad ingredients. Drizzle with dressing.

Eggplant Tomato Rounds

Serve 4 rounds per person for lunch or lighten it up and serve one round as an appetizer for only 42 calories !

But I bet you can’t eat just one ! 🙂

2 small eggplants, peeled and cut into 8 slices each
2 T oil
½ t salt
⅛ t pepper
½ t garlic powder
2 medium tomatoes, sliced
½ t basil flakes
½ t oregano flakes
½ cup low fat provolone cheese, shredded

Preheat oven to 425 degrees. Brush both sides of each eggplant round with oil and season with garlic powder, salt and pepper then bake 5 minutes per side. Please a slice of tomato on each round and sprinkle with oregano and basil. Divide cheese among the rounds and bake 5 minute to melt the cheese.

Zucchini Boats

This has a definite Middle Eastern flair to it with the coriander and cumin as the main seasoning. Serve next to Eastern Fried Rice for a great vegetarian meal.

2 medium zucchini, halved lengthwise
½ T oil
1 small onion, chopped
1 clove garlic, minced
2 oz. button or Portobello mushrooms, chopped
1 t ground coriander
¾ t ground cumin
½ c chick peas, rinsed and drained
1 T lemon juice
2 T chopped parsley
Salt and pepper to taste

Preheat oven to 350 degrees. Spray a baking dish with Pam. Scoop the flesh out of the middle of the zucchinis to create boats for the filling. Chop the removed flash and reserve. Heat oil in a skillet and cook onions 5 minutes then add garlic and cook another minute. Add chopped zucchini and mushrooms and cook 5 minutes then add coriander, cumin, chick peas, lemon, parsley, salt and pepper. Stuff the zucchini shells and bake 35-40 minutes.

Vegetable Paella

This is loaded with veggies and tastes so good ! It’s way quicker than a regular paella and if you really want some seafood in there, add some Buttery Baked Shrimp. Paella is a great healthy dinner that the whole family will enjoy.

3 T oil
½ onion, chopped
½ green bell pepper, chopped
½ poblano pepper, seeded and chopped
12 oz. sliced mushrooms, roughly chopped
2 cloves garlic, minced
1 t paprika
1 t oregano
½ t pepper
¼ t red pepper flakes
1 ½ c brown rice (MINUTE rice)
2 ½ c vegetable stock / broth
14.5 oz. can diced tomatoes
1 ½ t salt
9 oz. baby spinach leaves, chopped roughly
1 c frozen peas and carrots, thawed
1 c frozen or canned artichoke hearts
2 T red vinegar
¼ c chopped parsley

Heat oil in a Dutch oven or large soup pot on medium heat and cook onion 7 minutes. Add bell pepper, poblano pepper, mushrooms and salt and cook 5 minutes then add garlic, paprika, oregano, red pepper and black pepper and continue cooking another minute or two. Add stock and tomatoes and salt and bring to a boil. Then stir in rice. Cover and reduce heat to low and cook 7 minutes. Stir in spinach, peas, artichokes, vinegar and half the parsley. Season with salt and pepper to taste and cover again and let sit 5 minutes for all the juices to absorb. Serve with parsley garnish.

Grilled Tomatillos

Tomatillos are spicy little green fruits in the tomato family – you have probably eaten them in some salsas (salsa verde which translates to green salsa) and tomatillo sauces. Grilling them brings out a nice sweet flavor. This is a nice spicy addition to a meal that may be a bit on the blander side.

I served it aside Broiled Cod with Chili Powder – it was a great double whammy of flavor 🙂

¼ c basil leaves
1 clove garlic
1 T lemon juice
6 tomatillos cut into 1/2″ thick slices
1 T oil

Heat grill and oil grates or a grill pan. In a food processor mix the basil, garlic and lemon juice until smooth (adding 1-2 t water if needed). Brush tomatillo slices with oil and season with salt and pepper. Grill until lightly charred and then serve with basil sauce.

Quiche with Rice Crust

This is an excellent quiche – no one would ever know you never even opened the oven ! The Swiss cheese is just perfect with the spinach and mushrooms. And the crust is so much more flavorful than a regular crust. You’ll definitely make this one again and again.

1 c shredded low fat swiss cheese
¾ c Egg Beaters
¼ t curry powder
10 oz. package of frozen spinach, thawed and pressed dry in a colander
¾ c evaporated skim milk
½ c sliced mushrooms
2 T chopped shallots
¼ t garlic powder
¼ t onion powder
¼ t salt
1/8 t pepper

Combine rice, ½ c cheese, ¼ c Egg Beaters and curry and press into the bottom of a 9” glass pie plate. Microwave 4 minutes or until firm. Combine spinach, milk, mushrooms, onion, spices, ½ c cheese and ½ c Egg Beaters and mix well then pour into the crust and microwave on 50% power 20 minutes (rotate it every 5 minutes or so if your microwave does not have a turntable) or until a knife inserted comes out clean.
