Coconut Candy Bars

Delightful !! It’s basically a homemade Mound’s Bar but even more delicious ! Add a few nuts if you prefer Almond Joys 🙂 You don’t even miss the chocolate on the bottom – there is more than enough here ! Each bar is a GOOD size.

1 ¼ c unsweetened coconut
½ c skim milk
2 t unflavored gelatin
1 t cornstarch
1 t vanilla
1/2 c Melted Semisweet Chocolate for drizzling

Combine ¼ c coconut, milk, gelatin and cornstarch in a blender until smooth. Pour into a saucepan and cook over medium heat until slightly thickened then remove from heat and stir in vanilla and the rest of the coconut. Form into 8 bars and cool completely then drizzle with melted chocolate.

Key Lime Parfait

This has such a burst of lime flavor ! Your tastebuds really dance when you enjoy this parfait. At only 125 calories – have 2 🙂

12 oz. evaporated milk
1 envelope unflavored gelatin
½ c confectioner’s sugar
½ c low fat sour cream
½ t grated lime zest
½ c bottled or fresh key lime juice

Pour the milk in a bowl and place in the freezer for about an hour, or until crystals begin to form. In a glass measuring cup, sprinkle gelatin over ¼ c cold water and let stand 5minutes then place the cup in a pan of simmer water and heat 4-5 minutes or until gelatin has dissolved and then cool it to room temperature.

Beat the milk until soft peaks form and then gradually add sugar and beat until stiff peaks form. Beat in the sour cream and lime zest and then the cooled gelatin mix. Place bowl in refrigerator and chill ½ hour or so then fold the juice into the milk mixture and place into parfait glasses and chill another 2 hours.

Key Lime Pie

This is always a crowd pleaser and people can’t believe it’s made without sugar (Equal is the sweetener here). This is a perfect and refreshing end to a meal.

1 low fat prepared graham cracker crust
1 envelope unflavored gelatin
1 ¾ c skim milk
8 oz. low fat cream cheese, at room temperature
12 packets Equal
½ c fresh lime juice
Green food coloring (optional)
Lime slices (optional for garnish)

Sprinkle gelatin over ½ c milk in small pan and let stand 3 minutes then cook over low heat, stirring constantly, until gelatin is dissolved. Beat cream cheese until fluffy and then beat in res of the milk and the gelatin mix. Then mix in the juice and 12 packets of Equal. Add a couple of drops of green food coloring if you wish. The pie will be very thin and runny but will firm up quickly. Cover and refrigerate at least 2 hours.
