Raspberry Lemonade Pie

This tastes like a lemonade stand in a slice of pie ! It is so refreshing and delicious. Instead of the second pie, I used the extra filling to make homemade ice pops.

1 ½ c boiling water
.3 oz. package lemon Jello (sugar free)
4 oz. cream cheese, softened
6 oz. frozen lemonade concentrate, thawed
8 oz. cool whip, thawed
1 c raspberries
2 low fat graham crusts

Add boiling water to jello and stir 2 minutes to dissolve completely. Cool a bit and then add in the lemonade. Beat cream cheese until creamy and then gradually add jello mix. Stir in cool whip and berries and pour into crusts then refrigerate at least 4 hours. It will be very thin at this stage – after it is refrigerated it will thicken up a lot. You can also freeze this and simply thaw ½ hour or so before serving. Garnish with a few leftover raspberries.

Fruit Parfaits

These whip up in no time and are so versatile – you can use any flavor jello and any flavor fruit – – just make sure it’s frozen fruit. The frozen fruit is what makes the jello firm up in no time flat. I did this with raspberries and the dessert was just amazing tasting !

3/4 c boiling water
1 c Cool Whip, thawed
.3 oz. package flavored sugar free jello, raspberry or strawberry flavor
2 c frozen raspberries or strawberries

Add water to jello and stir 2 minutes to dissolve then stir in 2 c frozen fruit until jello starts to thicken. Add ½ c of the mix to the Cool Whip and whisk to blend then spoon into dessert cups and cover with the rest of the jello mix. Refrigerate 15 minutes.

Lemon Mousse

This is so super refreshing – so very lemony ! And just the perfect dessert on a hot summer night. The consistency is VERY light – it’s like eating a lemon cloud.

2 .3 oz. sugar free lemon jello
2 c boiling water
14 oz. diet Sprite
¼ c lemon juice
12 oz. Cool Whip Lite, thawed

Mix jello with water and stir to dissolve then add soda and lemon juice and chill until slightly thickened. Beat until frothy and then stir in Cool Whip. Pour into individual cups and chill at least one hour.

Raspberry Lemonade Pops

This tastes like a lemonade stand – utterly delicious ! The original recipe I had was for a pie, but the filling is just great in a homemade ice pop. How refreshing – tart and sweet at the same time just like a great lemonade !!
