Spiced French Toast

The ginger in this recipe is a nice unexpected flavor that makes it just perfect. This works just as well with regular bread and with a quick dip rather than chilling over night.

2 eggs
2 egg whites
¾ c skim milk
1 T sugar
1 T molasses
¼ t ground ginger
¼ t ground allspice
1/8 t salt
6 slices French bread (3/4 inch thick)
2 t butter

Mix eggs, whites, milk, sugar, molasses, ginger, allspice and salt. Place bread in a 13×9 baking sheet and out the egg mix over it and refrigerate overnight. Heat butter on a griddle and cool bread 3 minutes each side.

Grilled Banana French Toast

Talk about decadent and delicious !! This breakfast dish will give you legendary ‘short order cook’ status ! The bananas and cream cheese make a perfect middle to the grilled raisin bread.

8 slices 80 calories cinnamon raisin bread
2 medium bananas, in slices
1 c skim milk
4 oz. cream cheese, softened
3/4 c egg beaters
1/3 c Splenda
3 T flour
2 t vanilla
Powdered sugar (optional)

Spray skillet with Pam and heat well. Mix milk, cheese, eggs, sugar, flour and vanilla with a mixer until. Take 4 slices of bread and spread with cream cheese then add banana slices and top with the remaining bread. Gently dip into the egg mix and then place on pan and cook 2-3 minutes. Flip and cook another 2 minutes. Cut in half and sprinkle with powdered sugar before serving.

Orange Cinnamon French Toast

Sweet honey, orange and cinnamon – a great winning combination. This is a great, easy breakfast prep so it’s great for serving overnight guests.

2 T honey
½ t cinnamon
3 eggs
½ c orange juice
1/8 t salt

Preheat oven to 400 degrees. Combine butter, honey and cinnamon and pour into a 13×9 pan sprayed with Pam. Beat eggs, orange juice, and salt. Dip bread into egg mix and place in pan then bake 15-20 minutes or until golden brown. The underside will get much more brown so be sure not to over cook. Serve with extra honey.

Cinnamon Raisin French Toast

Take the whole frying hassle out of French toast preparation – and add some great apples and nuts along the way. This was a really easy way to prep a great breakfast. Add some extra maple syrup over the top to give it even more flavor !

2 egg whites
¾ c skim milk
1 T Splenda
½ t vanilla extract
½ t cinnamon
8 slices cinnamon raisin bread (80 calories per slice) cut in half diagonally
1 t buttery spread
1 T maple syrup
2 apples sliced thinly
4 T sliced almonds

Preheat oven to 350 degrees. Spray a 9×13 baking pan with Pam. Whisk Egg Beaters, egg whites, milk, splenda, vanilla and cinnamon then pour into pan and top with the bread slices. Flip the bread over once to it gets a little coating on each side. Cover with foil and bake 15 minutes then remove foil and bake another 8-10 minutes. Melt butter in skillet and add syrup, then apples. Cover and cook on low heat 10 minutes or until apples are soft then uncover and cook 1 minute to dry up the mix a little. Serve bread with the apple mixture over top and sprinkle with nuts.

Elvis’ French Toast

French toast with a peanut butter and jam filling – yummy ! You only get ½ of the sandwich for 236 calories, but this is a filling, sweet, satisfying dish and even at half a sandwich, you and your taste buds will be happy 🙂

6 slices whole wheat bread
¼ c creamy peanut butter
½ c Egg Beaters
¼ c skim milk
Pam
1 large banana, sliced
1 T honey
1 T orange juice
1 T dry roasted peanuts, chopped

Spread preserves over 3 bread slices and peanut butter over the other 3 slices and make sandwiches. Cut the sandwiches diagonally and dip in a mix of milk and eggs. Spray skillet with Pam and on medium high heat cook the sandwiches 2 minutes or so per side. Combine banana slices, honey, juice and peanuts. Plate sandwiches and top with the banana mixture.

This stuffed French toast is a welcome change to boring old French toast. The surprise inside is preserves and creamy cheese ! Make it different every week by changing the flavor of the preserves and the fruit topping.

2 T low fat cream cheese
4 slices whole wheat bread (45 calories per slice)
2 T strawberry preserves
1/2 c egg beaters
3 T skim milk
1 t vanilla
1/2 t cinnamon
1/8 t nutmeg
Pam
optional – fresh or frozen berries for the top

Spread cream cheese on 2 slices of bread leaving a small border so it will not melt out of the sandwich when cooking. Put preserves on the other 2 pieces and make a sandwich. Cut in half. Beat eggs and whisk in milk, vanilla and spices. Heat a skillet and spray with Pam. Dip the sandwich halves in the egg mix and let site a few seconds to soak up some of the mixture. Put in 2 at a time if you have room the bowl. Cook 3 minutes each side.
