Mini Meatball Soup

Tasty little meatballs in a aromatic steaming bowl of broth – this makes the whole house hungry as it cooks ! This is one of the best meatball soups I’ve made 🙂

2 t oil
8 oz. sliced mushrooms
3 c coleslaw mix shredded cabbage
1 ½ t oregano flakes
3 cloves garlic, minced
3 c beef stock
2 c chicken stock
4 c water
2 T tomato paste
6 oz. lean ground beef
1 large egg
¼ c grated Parmesan cheese
¼ c bread crumbs
2 T parsley, chopped
½ t garlic powder
¾ t pepper
½ t salt
½ c chopped roasted red peppers
1 c minute rice

Heat oil in a heavy soup pan and sauté mushrooms for 4 minutes. Add cabbage, 1 t oregano and half the garlic. Cook 1 minute more and then add stocks, water and tomato paste. Reduce to medium heat. Mix beef, egg, cheese, bread crumbs, 1 ½ T parsley, garlic powder. pepper, salt, the rest of the oregano and the rest of the garlic. Make meatballs using only 1 teaspoon of mix per meatball, and place them in the broth and simmer about 10 minutes or until mostly done. Add peppers, rice and rest of the parsley. Let sit 6-7 minutes.

Spicy Hot Tomato Soup with Shrimp

For those that like it HOT, HOT, HOT – – this is the soup. The addition of the Spicy Hot V-8 makes for a perfect spicy base. Be sure to remember the lime splash just before serving – it makes a big difference in the flavor.

3 c chicken broth
2 c Spicy Hot V-8 juice
1 c Minute Rice
1 T oil
1 t minced garlic
¼ c sliced shallots
1 lb. large shrimp, peeled and cleaned
4 lime wedges
1 c chopped mushrooms
1 c bean sprouts (fresh or canned)
3 T chopped cilantro
Salt and pepper to taste

Mix broth, juice and water in a soup pot and bring to a boil then stir in rice and bring back to a boil. Remove from heat, stir in bean sprouts and let stand 5 minutes. Heat oil and sauté garlic and shallots for 2 minutes. Stir in shrimp, mushrooms, salt and pepper and sauté 3 minutes or until shrimp are done. Stir shrimp and cilantro into soup. Sprinkle with lime just before serving.

Vegetable Paella

This is loaded with veggies and tastes so good ! It’s way quicker than a regular paella and if you really want some seafood in there, add some Buttery Baked Shrimp. Paella is a great healthy dinner that the whole family will enjoy.

3 T oil
½ onion, chopped
½ green bell pepper, chopped
½ poblano pepper, seeded and chopped
12 oz. sliced mushrooms, roughly chopped
2 cloves garlic, minced
1 t paprika
1 t oregano
½ t pepper
¼ t red pepper flakes
1 ½ c brown rice (MINUTE rice)
2 ½ c vegetable stock / broth
14.5 oz. can diced tomatoes
1 ½ t salt
9 oz. baby spinach leaves, chopped roughly
1 c frozen peas and carrots, thawed
1 c frozen or canned artichoke hearts
2 T red vinegar
¼ c chopped parsley

Heat oil in a Dutch oven or large soup pot on medium heat and cook onion 7 minutes. Add bell pepper, poblano pepper, mushrooms and salt and cook 5 minutes then add garlic, paprika, oregano, red pepper and black pepper and continue cooking another minute or two. Add stock and tomatoes and salt and bring to a boil. Then stir in rice. Cover and reduce heat to low and cook 7 minutes. Stir in spinach, peas, artichokes, vinegar and half the parsley. Season with salt and pepper to taste and cover again and let sit 5 minutes for all the juices to absorb. Serve with parsley garnish.

Umami – the fifth taste (after salt, sweet, bitter, and sour) – Umami tastes earthy and savory – and a perfect example of the taste is mushrooms or tomatoes – and this recipe has both – it is umami-delicious !

Just about any mushroom with work in this recipe, but I like portobellos for their intense mushroom flavor.

1 t oil
1 c sliced baby portobello mushrooms
1/2 c grape tomatoes, halved
1 garlic clove, minced
2 containers precooked brown rice (4.4 oz each)
1/4 t salt
1/8 t pepper

Heat oil in a large skillet on medium high and add mushrooms. Cook for 2 minutes and add tomatoes and garlic and cook another 2 minutes. Heat rice in microwave according to package instructions. Add to mushroom mix along with salt and pepper. Serve immediately.

Rice and Sausage

What a great quick and easy meal for a weeknight ! It’s kinda like having sausage and peppers over rice – definitely a great flavor !

10 oz. low fat andouille sausage or kielbasa, cut into bite sized pieces
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 celery stalk, diced
Salt and pepper to taste
1 14.5 oz. can diced tomatoes
2 c cooked brown rice

Heat skillet and spray with Pam and cook sausage until crispy, about 10 minutes. Add onion, garlic, red pepper, celery, salt and pepper and cook 8-10 minutes then add tomatoes and cook another 4 minutes. Serve with brown rice.

Since your carbs and veggies are together in one dish, this recipe is a great side dish to complete a fish or chicken dish. It has just the right amount of veggies and a lovely mild flavor.

½ c chopped carrots
1/2 c chopped celery
½ c chopped red peppers
14.5 oz. chicken broth
1 ½ c Minute white rice, raw
1 c frozen peas
Salt and pepper to taste

Heat oil in skillet and sauté onions, carrots, celery, peppers, salt and pepper for 7 minutes. Add broth and bring to a boil and stir in the rice and peas. Cover and simmer 5 minutes then remove from heat and let stand 5 minutes so liquid is absorbed.

Quiche with Rice Crust

This is an excellent quiche – no one would ever know you never even opened the oven ! The Swiss cheese is just perfect with the spinach and mushrooms. And the crust is so much more flavorful than a regular crust. You’ll definitely make this one again and again.

1 ½ c cooked brown rice
1 c shredded low fat swiss cheese
¾ c Egg Beaters
¼ t curry powder
10 oz. package of frozen spinach, thawed and pressed dry in a colander
¾ c evaporated skim milk
½ c sliced mushrooms
2 T chopped shallots
¼ t garlic powder
¼ t onion powder
¼ t salt
1/8 t pepper

Combine rice, ½ c cheese, ¼ c Egg Beaters and curry and press into the bottom of a 9” glass pie plate. Microwave 4 minutes or until firm. Combine spinach, milk, mushrooms, onion, spices, ½ c cheese and ½ c Egg Beaters and mix well then pour into the crust and microwave on 50% power 20 minutes (rotate it every 5 minutes or so if your microwave does not have a turntable) or until a knife inserted comes out clean.

Sun Dried Tomato and Spinach Soup

The flavor from the sundried tomatoes really permeates the whole soup making it rich and sweet and utterly delicious ! Soup in about 10 minutes and it tastes fantastic !

2 medium shallots, coarsely chopped
1 clove garlic, minced
½ c brown rice, cooked (Minute Rice is fine)
8 c lo fat chicken broth
½ c sundried tomatoes, rinsed and cut into small pieces
½ c sliced mushrooms
1 t pepper
½ lb fresh spinach leaves

Heat oil in Dutch Oven. Add onions and garlic and cook 4-5 minutes. Add broth and bring to a boil then add tomatoes, mushrooms and pepper and simmer 5 minutes then stir in spinach and heat thoroughly.

This is so much better than any of the pre done rice mixes and it is so much healthier too !

1 large shallot, finely chopped
1 garlic clove, minced
2 T tomato paste
1 c white rice
1 ¾ c chicken or beef broth
½ t oregano flakes
Coarse salt to taste

Heat oil and cook garlic and shallot until shallot begins to brown, about 7 minutes. Then add tomato paste and stir well. Add rice, broth, oregano, salt and pepper and bring to a boil them reduce heat to low, cover and cook until liquid is absorbed, about 15 minutes. Let sit covered 5 minutes.

South of the Border Chicken

This is one of those PERFECT meals. Some meals are just spiced perfectly, cook up perfectly time and time again, and deserve a place in the Hall of Fame of recipes – this is one of those. If you love Mexican inspired dishes, you have to give this one a try !

12 oz. boneless skinless chicken breasts
¼ t pepper
¼ t salt
2 t oil
1 medium onion, chopped
2 cloves garlic, minced
1 c fat free beef broth
1 8 oz. can tomato sauce
1 15 oz. can black beans, rinsed and drained
1 4.5 oz. can chopped chilies
1 t chili powder
½ t ground cumin
3 c hot cooked rice

Sprinkle chicken with salt and pepper and place in a hot skillet sprayed with Pam. Cook 5 minutes or until they begin to brown then set aside and keep warm. Heat oil and add onion, garlic and 2 T of the broth. Cook 6 minutes or until tender then add tomato sauce, beans and the rest of the broth and mix well. Add the pepper, chili powder, cumin and chicken and bring to a boil the reduce heat and simmer 15 minutes. Serve over rice.
