Nilla Parfaits

I made 4, 3 of us ate one each and then fought over the 4th 🙂 They are that good !! Make sure you use a nice creamy vanilla yogurt; one that tastes like ice cream. I love Turkey Hill brand. This is just one of those perfect desserts !

2 cups vanilla frozen yogurt, softened (I like Turkey Hill brand)
8 Nilla Wafer cookies, crushed well
1 1/2 bananas, sliced
1/4 c chopped toasted pecans

In small dessert cups or parfait glasses or even in wine glasses, layer ingredients and then freeze at least half an hour. Here are the layers:

Yogurt
Banana
Nuts
Yogurt
Banana
Nilla crumbs
Nuts
1 slice of banana for garnish

Chocolate Bark

This chocolate bark is made with matzah crackers and it is just delicious – – and the prep time is only 5 minutes ! This is great to serve as a dessert when you have company. If you don’t like almonds, use any chopped nuts.

2 1 oz. UNSALTED matzah crackers
1 4 oz. bittersweet chocolate bar chopped up into small pieces (or semisweet chocolate chip morsels)
2 T toasted chopped almonds

Place chocolate in microwave and cook on high 1 minute. Stir and cook another 30 seconds. Mix well assuring it is all melted and no chunks are left. Pour over crackers and spread with a spatula until well covered. Sprinkle with almonds and press them into the chocolate so they stick well. Let stand until hardened and then cut into 4 pieces each.

Make sure you don’t skip the ‘toasting the nuts’ portion of the recipe. It really makes a difference in their flavor and just takes a few minutes – chop your nuts and then place in a dry hot skillet. Stir and continue cooking a few minutes until toasted. You will know they are ready as they will be a little browned and you will start to smell the aroma 🙂

Avocado and Spinach Salad

Kraft has so many great dressing out there – as well as using them on their own, they make GREAT to use as ingredients in other dressings, sauces, marinades, etc. This salad is a Kraft recipe and it was so good !

250 calories per serving

1/2 c sliced avocados
3 T mandarin orange juice
2 t lemon juice
3 c baby spinach leaves
11 oz. can mandarin oranges (reserve 3 T juice / rinse the oranges in cold water)
1/4 c Kraft Catalina dressing (sweet French dressing)
2 T pecans (or other nuts), toasted
To toast nuts, heat a skillet on medium high then add nuts. Cook, stirring frequently, until the heat brings out the flavors, about 2-3 minutes (when you smell the great aroma, they are just about done).

Mix dressing,. Lemon juice and orange juice. Pour over spinach, oranges and avocados. Garnish with nuts.
