Shrimp with Spicy Sauce

The flavor from the sauce just explodes in your mouth – paired with sweet, low fat shrimp, it’s a combination made in heaven.

2 garlic cloves
1/2 c roasted red peppers, drained
1/4 c light mayonnaise
1/2 t salt, divided
1/8 t crushed red pepper
1 1/2 lb. shrimp
1/4 t fresh ground black pepper

Preheat oven to 400 degrees. Mince garlic in good processor. Add peppers, mayo, 1/4 t salt and red pepper. Process well. Rinse shrimp and pat dry. Sprinkle with the rest of the salt and black pepper. Spray a baking sheet with Pam and place shrimp in a single layer. Bake 7-8 minutes or until done. Spoon sauce onto a platter and plate shrimp and serve immediately.

Luncheon Chicken Salad

Chicken salad served on a lettuce leaf and with pita wedges instead of on sandwich bread just makes it a whole different beast. And all the fresh flavors in this particular recipe renewed my love of chicken salad.

2 c diced cooked chicken breast
1 1/4 c chopped seeded cucumber
1/2 c matchstick carrots
1/2 c sliced radishes
1/3 c chopped green onions
1/4 c light mayo
2 T chopped cilantro
1 t minced garlic
1/4 t ground cumin
Salt and pepper to taste
4 romaine lettuce leaves
4 6 inch whole wheat pitas, cut into 4 pieces each

Mix chicken, cucs, carrots, radishes and green onions. Whisk together mayo, cilantro, garlic, cumin, salt and pepper. Then mix that into the chicken and veggies. Place a lettuce leaf on each plate and top with 1 c chicken mixture. Serve with pita wedges.

Roasted Garlic Dip

Just the right amount of garlic in a great savory dip that is perfect for any occasion.

2 whole garlic heads
4 T mayonnaise
5 T plain Greek yogurt
1 t mustard
1 T olive oil
Salt and pepper to taste

Preheat oven to 400 degrees. Separate the garlic cloves from the whole head, peel them and place in a baking dish and mix with the oil and salt. Cover with foil and bake / roast 30-40 minutes (or until very tender) and then let cool 5 minutes. Mash garlic with a fork then combine with the rest of the ingredients. Cover and chill. Sprinkle with black pepper just before serving.

Zucchini Fries

Though in a typical aioli the mayo is made from scratch by whipping the eggs, you can make a quick version with low fat mayo, garlic and lemon zest and you’ll be in dipping heaven. The zucchini fries are perfect with the sauce. Try serving next to a chicken or turkey burger for a saintly version of a burger and fries.

1 lb. zucchini (about 3)
1/4 c grated parmesan cheese
1 pack Shake and Bake
1 egg
1/2 c low fat mayo
1 t lemon zest
2 garlic cloves, minced

Heat oven to 450 degrees. Spray a baking sheet with Pam. Cut zucchini into ¼ inch ‘french fries’. Mix cheese with Shake and bake and place in a zip loc bag. Whisk egg and toss with zucchini then drain off any excess egg and working in batches place zucchini in zip loc and shake to coat. Spread zucchini on baking sheet and cook 12-13 minutes turning half way through.

Mix mayo, lemon and garlic and serve as a dipping sauce.

Spring Rice and Veggie Salad

This is very different from your typical mac salad ! Instead of pasta, this recipe uses rice and adds some nice fresh Spring veggies. What a great dish to serve at your next barbecue !

4 c cooked minute rice (white or brown) – after cooking , cool to room temperature
1 c halved grape tomatoes
1 c fresh asparagus spears (cut into 1 inch pieces), boiled 3 minutes then rinsed in cold water
3/4 cup light mayo
1 T Dijon mustard
1 T chopped parsley
Juice of one lemon
Grated zest of one lemon
Salt and pepper to taste

Mix all ingredients well and serve. (you could also chill this and then serve – but I like it best room temperature)

Sub Sandwich

A little of this, a little of that – all on a roll … and you get a sub sandwich. This is a great mixed meat sub that is filling and a great take a long lunch.

1 T low fat mayonnaise
1 T mustard
½ c chopped lettuce
2 slices tomato
4 slices thin deli roast turkey (Oscar Mayer pre-packaged meats are great)
4 thin slices deli ham (Oscar Mayer pre-packaged meats are great)
1 slices low fat swiss cheese

Mix mustard and mayo and spread on the inside of both sides of the roll. Place all meats and cheese on roll and top with lettuce and tomato.

Low Fat Mac Salad

When you add in a lot of veggies to bulk up mac salad, you can really bring down the calorie count and this one is so creamy !

8 oz. multi grain pasta, uncooked
3 c small broccoli florets
1 red or green pepper, chopped
1 c low fat mayo (I like using the olive oil one!)
1/4 c low fat sour cream
2 T Dijon mustard
1 T red vinegar
Salt and pepper to taste
2 hard boiled eggs, chopped

Cook pasta according to package instructions and add the veggies into the water during the last 2 minutes of cooking time. Rinse with cold water to stop the cooking process and then drain well. Add mayo, sour cream, vinegar, salt and pepper, and mustard and stir well then add eggs. Chill at least 3 hours so the flavors mingle.

Tuna Pitas

Serve up your tuna in a pita and it just become a whole different animal ! This is one of my favorite ways to eat tuna – with lotsa celery bits. But if you don’t like celery, substitute chopped up pickles or onions. The addition of the lemon pepper seasoing gives this extra special flavor !

2 T light mayo
3 T chopped celery
½ t onion powder
¼ t salt
¾ t lemon pepper seasoning
1 Sahara Pita bread (or any other brand that comes in at 170 calories or less)

Mix tuna, mayo, celery, salt, onion powder and lemon pepper. Spoon into pitas and serve.

Hot Chicken and Swiss Sandwich

Sometimes serving a sandwich hot makes it sooooo much more special. This is one of those times. The melted swiss just gives it a whole other dimension.

Preheat oven to 350 degrees. Mix mayo and mustard and spread on bread. Add chicken and cheese and sprinkle with the spices. Wrap in foil and bake 10 minutes. Remove from oven, add spinach leaves and enjoy !

This sandwich has so much flavor going on ! Artichokes, roasted peppers, ham, turkey – oh my !

2 T chopped marinated Italian peppers
¼ c baby arugula leaves
1 T low fat mayo

Toast bread (if desired) then spread on the mayo. Top with meats and cheese, then the artichokes, peppers and arugula.
