March 27th, 2012Lunch, SandwichesLaughing Cow has some great recipes. Their light cheese wedges are only 30 calories per wedge and they come in a variety of flavors. So much flavor is packed into those little wedges ! With all the flavor and creaminess from the cheese, you barely miss the mayo in this recipe !

130 calories per serving2 wedges light Laughing Cow Cheese (original Swiss flavor works great here), chopped finely
2 hard boiled eggs, chopped
1 t yellow mustard
Salt and pepper to taste
2 dill pickles slices, chopped finelyMix all ingredients and chill for an hour. Served on 2 slices of light whole wheat bread, and you come in at only 220 calories for a filling, nutritious lunch sandwich.

137 calories per serving1 wedge Laughing Cow Light Queso Fresco & Chipotle cheese
2 flour tortillas (80 calories each)
1/3 c low fat shredded cheddar cheese
PamSpread the Laughing Cow cheese on the tortilla. Top with cheddar and fold. Spray pan with Pam and heat well. Add tortillas. Spray the sides of the tortillas facing up. Cook 2 minutes then flip and cook the other side 2 minutes.

November 9th, 2011Lunch, MUFAs, Sandwiches, turkeyWraps make great lunches and you can stuff them with just about anything. This one has some of my favorite things…including BACON ! And spreading the Laughing Cow cheese on the whole wrap ensures that you get cheesy goodness in every bite !

344 calories per serving1 Wrap (80 calorie La Tortilla Factory version)
1 wedge Laughing Cow Light Cheese (original Swiss flavor)
2 slices turkey bacon
3 slices deli turkey
Alfalfa sprouts or some shredded lettuce
1/2 c chopped or sliced tomatoes
3 slices avocadoCook the bacon according to package instructions. Lay wrap on flat surface. Spread the cheese wedge on it. When placing ingredients down the center of the wrap, do not go quite to the bottom – leave a little room (1 inch) so you will be able to wrap is securely. Place the turkey slices down the center. Lay the bacon slices down the center. Spread sprouts and tomato down the center. And finally lay the 3 avocado slices down the center. Wrap securely.
Some people shy away from them for the simple reason that they do not know how to wrap them so that the stuff stays in place. Take a quick look at my video showing you how to get a nice tight wrap that will not leak.

Think of this as a turkey sandwich without the bread. It is so light, yet super tasty and a great healthy lunch. It packs easily and it’s as easy as putting together a sandwich. You have heard about meatless days – try some carb free days for a boost to your diet.

95 calories per serving6 slices deli thin turkey slices (Hillshire Farms or Oscar Mayer presliced deli meat is great!) – I like to use the cracked pepper turkey for extra flavor.
1 wedge Light Laughing Cow cheese
2 iceberg lettuce leavesSpread lettuce leaves with cheese. Place turkey in leaves and roll up – secure with a toothpick or if you are packing them, roll with foil to keep fresh.

6 slices deli turkey breast
2 slices tomato
1 Laughing Cow light cheese wedge
2 avocado slicesSpread the cheese on the wrap then fill with the rest of the ingredients and wrap it up. Here is a video that shows you how to make a wrap that does not leak

2 T black olive spread (tapenade) – or just chopped black olives
1 wedge Laughing Cow Light cheese, regular flavor
1/4 c sliced cucumber
3 sundried tomatoes diced up
3 large romaine leaves
2 slices cooked turkey baconToast muffin. Spread cheese on both sides. Spread olive tapendade on one half. Pile up the rest of the stuff and dig in

January 13th, 2010BreakfastThis is a great place to mix and match – anything that goes into an omelette can go in here – mushrooms, peppers, onions, ham, etc.

1 Laughing Cow light cheese, cut in cubes
Pam
1 piece of 45 calorie bread, toasted
1 T buttery spreadHeat pan on medium heat. Remove from heat and spray with Pam. Return to heat. Add Egg Beaters and scramble lightly. Once eggs are set, add cubes of cheese and fold in until well distributed and eggs are done.
Toast bread and add 1 T buttery spread. Serve immediately.

January 7th, 2010Kid Friendly, SnacksAhhh – cheese ! There is nothing quite like it. And in most diets it is highly taboo due to the calories and fat content. These wedges of goodness fit right into my diet plan coming in at 50% less fat than the regular and a mere 35 calories per wedge. The wedges are BIG. Do not think these are like those little Laughing Cow squares. They are not. These are gloriously big cheesy wedges !
They come in 3 wonderful flavors:
Original (Swiss blend)
Garlic and Herb
French OnionThey are a very creamy and soft cheese – more like a spread, really. And they are perfect used in a multitude of ways. Here’s how I use them…
- Use in my Macaroni and Cheese recipe, either alone or with a mixture of other cheeses
- Melt and mix with a little skim milk to make a sauce for broccoli and other vegetables
** Open one up and dip pretzel rods in for a quick snack (my favorite!)
- Spread on a toasted whole wheat muffin and top with tomato slices for a great Cheese Muffin
- Cut into cubes and drop into scrambled eggs just before they set
- Spread in wraps before making lunch or breakfast wrap recipes

I know I sound like a commercial. But I love these things ! And I want you all to buy them too so they don’t stop making them

January 3rd, 2010FiberGourmet, Lunch, SidesThis is rich and creamy and almost ½ the calories of regular mac and cheese due to the Laughing Cow Light cheese and the FiberGourmet pasta ! I really suggest you try some – you’ll never know the difference !

290 calories per serving6 oz. FiberGourmet Pasta
4 wedge Laughing Cow Light cheese (I use original flavor, but any of the 3 will work)
2 T skim milk
2 T hot water
2 T shredded 2% milk cheddar cheese
6 sprays I Can’t Believe It’s Not Butter spray
Salt and pepper to taste
¼ t onion powderCook pasta according to package instructions. Drain and place in a bowl with all other ingredients. Stir to mix well. Enjoy !!!

December 24th, 2009SnacksI have a set of ‘GO TO’ snacks so that when I am hungry, I don’t dig into something that will tip the calorie scale for the day. Make a list, keep them around the house, keep them front and center on your snack shelves !
Almonds – raw, unsalted – - great for also getting in your good fats for the day
Sunflower seeds – high on the calorie scale but if you eat them individually, you’ll be tired by time you come to the end of 1/4 cup
Low fat string cheese – only 50-70 calories per stick and very satisfying
Turkey Pepperoni – pair it up with the string cheese !
Fiber One 50 calorie cups of yogurt
Pretzels
Celery sticks – cut them up on Sunday and keep them in a container ready to go all week (dip in Tzatziki) or eat with a Light Laughing Cow cheese
Light Laughing Cow cheese wedge – only 35 calories – WOW!
Pop Chips – these AWESOME 100 calorie chips are real potatoes, they are just popped instead of fried or baked. They come in many flavors and you can get them in single serve bags and the come out to less than a dollar a bag
Semi Sweet Chocolate Chips – eaten a few at a time, a tablespoon or 2 can keep you busy for a while
Jax (cheese doodles) – lots of curls for 130 calories
Ricola chewy breath mints – very minty – and after mint, I don’t want anything else for a while
Coffee – not a snack when it is just coffee, but by the time I am done with flavorings and toppings, it is more like a low cal dessert
