Greek Orzo

Orzo is one of my favorite pastas – I have to be careful because when it’s around, I have a hard time keeping to my serving size ! This recipe is especially good and incorporates 2 strong flavors that go well together, sun dried tomatoes and feta cheese. Next time I might add some fresh basil just before serving.

1 ½ c chicken broth
½ c orzo
2 T minced sun dried tomatoes
2 T crumbled feta cheese
1/8 t kosher salt
1/8 t pepper

Bring broth to a boil and stir in orzo and cook until liquid is absorbed, about 9 minutes. Remove from heat and stir in tomatoes and feta. Stir until feta melts a bit. Season with salt and pepper.

Turkey Paninis

Turning a regular sandwich into a Panini makes it much more special – and all you are doing is grilling it up and pressing it a bit to melt down all the contents really well. A have a Panini pan that goes right on the stovetop – I also have a George Foreman type grill, but I like doing it stovetop better.

2 T fat free mayo
4 t pesto (get the prepared version from the refrigerator section of your grocer)
8 1 oz. slices sourdough bread
8 oz. deli turkey (low fat Sara Lee or Hormel prepackaged works great here)
2 oz. thinly sliced provolone cheese
8 slices tomato

Combine mayo and pesto and spread 1 T on each of 4 slices of bread. Top each slice with turkey, 1.2 oz. cheese, 2 tomato slices and the rest of the bread. Preheat grill pan and spray with Pam. Spray each sandwich with a few spritzes of the ICBINB Spray and add sandwiches and cook 3 minutes per side.

Mushroom and Pepper Pizza

Lotsa different toppings can go on here to change it up. Anything that goes on a real pizza tastes good here. Extra veggies really don’t push up the calorie count much…mushrooms, peppers, onions, broccoli, etc.

4 6-inch whole wheat pitas (Arnold’s Sahara are a good low cal choice)
3/4 cup marinara sauce
1/4 t crushed red pepper
1/4 t garlic powder
1/2 t oregano flakes
1 c shredded low fat mozzarella cheese
½ green bell pepper in thin slices
½ c mushroom slices
1/2 T olive oil mixed with 1 t water

Preheat oven to 350 degrees. Brush oil on the pitas. Spread with sauce and sprinkle with oregano, pepper and garlic powder. Sprinkle cheese over the tops. Add mushrooms and peppers. Cook for 15 minutes or until cheese is bubbly and starting to brown.

I like it extra spicy, so I also add some red pepper flakes right on top of the sauce.

Eggplant Parmesan

This makes a nice crispy eggplant parm that is tasty and satisfying. You can always substitute regular breadcrumbs, but I think this comes out better with the panko breadcrumbs.

1/4 c skim milk
2 large eggs
1 1/2 c panko breadcrumbs
1/2 t salt
1/2 t parsley flakes
1/2 t garlic powder
1/4 t oregano flakes
1/4 t pepper
1 large eggplant, peeled and cut crosswise into 1/4 inch thick slices

1 T oil
24 oz. marinara sauce
½ c shredded mozzarella cheese
½ c shredded or grated parmesan cheese

Preheat oven to 450 degrees. Combine milk and eggs in a bowl. In another bowl combine breadcrumbs, salt, parsley, garlic, oregano and pepper. Dip eggplant slices into the egg mix, then into the breadcrumbs to coat. Press down on the crumbs to make sure they stick well. Spray a baking sheet with Pam and place the eggplant slices on it, drizzle with half the oil and bake for 15 minutes. Turn slices over and drizzle with the rest of the oil and bake another 15-20 minutes. Remove from oven and reduce oven temperature to 375 degrees. Place 1/2 c sauce in an 11×7 baking dish and place half the eggplant slices in the pan and then spoon 1 cup sauce over. Sprinkle with ½ of each of the cheeses and then repeat the layer. Bake 20 minutes or until bubbly.

Meatball Parmesan in a Pita

I like my meatballs very spicy, so I add a good amount of red pepper flakes to this one. Prep time is 5 minutes – that’s it !

1 whole wheat pita (140 calorie version)
3 vegetable meatballs
1 T shredded parmesan cheese (shredded, not grated)
3 T marinara sauce
Spices to taste: pepper, oregano flakes, red pepper flakes, garlic powder, onion powder

Slit open the pita. Slice meatballs in thirds and heat meatballs, spices and sauce for 30 seconds in the microwave. Fill the pita with the meatballs, sauce and cheese.

Chicken and Bean Quesadillas

This is one of those really filling quesadillas. Between the whole wheat wrap, the beans, chicken, AND cheese, it really makes for a great lunch. The salsa verde is a nice twist, but if you don’t like the taste, feel free to substitute regular salsa 🙂

1 c cooked shredded or diced chicken breast (Perdue Shortcuts are a great time saver!)
1/3 c salsa verde, divided
1/2 c black beans
1/2 c kidney beans
2 9 inch whole wheat tortillas (80 calorie version)
1/2 c shredded low fat Mexican blend or cheddar cheese

Extra salsa verde for dipping (at only 10 calories for 2 tablespoons, don’t be shy !)

Combine cooked chicken and half the salsa verde in a skillet and heat through . Combine beans and the other half of the salsa, lightly mashing some of the beans with a fork. Microwave for 30 seconds to heat. Spread the bean mix over each tortilla and then the chicken mix and then sprinkle with 1/4 c cheese. Fold in half. Spray skillet with Pam and heat to medium high. Add quesadillas and cook 2-3 minutes each side or until lightly browned. Serve with additional salsa.

‘Who Dat?’ Superbowl Dip

This is a great party dish and I’m serving it up for Superbowl. Unlike most of the other snacks that will be around, this one is low cal and nutritious so I will try and stay on the side of the table with this instead of the KFC wings 😉

1 can refried black beans
1 T chili powder
½ r cumin
1 c light sour cream
1 c shredded light cheddar cheese
3 green onions, sliced
1/3 c sliced black olives
1 tomato, chopped

Mix the beans, chili powder and cumin and spread on the bottom of a serving bowl or pie plate. Top with a layer of sour cream. Sprinkle with cheese, onions, olives and tomato. Refrigerate until well chilled. Serve with tortilla chips.

Ham Sandwich

The cucumbers really make this a juicy sandwich without having to use any mustard or mayo. But if you can’t live without them, no worries, there are plenty of calories to spare in this satisfying lunch sandwich.

Pesto Chicken Salad

I make this one up the night before and let refrigerate overnight. The pesto and cheese make a rich sauce and all the flavors here just combine really well.

1/4 c cooked FiberGourmet* pasta (regular whole wheat pasta will certainly do, it will just raise the calorie count)
1 T pesto
3 oz. diced cooked chicken (Perdue Shortcuts)
1 c halved grape tomatoes
3/4 c shredded carrots
2 T shredded parmesan

Mix all together and refrigerate a couple of hours before eating.

*FiberGourmet is this awesome pasta that has way fewer calories than even whole wheat pasta and other specialty pastas. I buy it online at Amazon and use it in soups, salads, dinner sides, mac and cheese, etc. By using it instead of other types, I can really increase the amount I can eat and that’s good because I LOVE PASTA !! 🙂

Greek BLT

Look at all that cheese, and bacon ! This is great as a breakfast or lunch. There’s lots of strong flavors here but they combine well together.

2 T black olive spread (tapenade) – or just chopped black olives
1 wedge Laughing Cow Light cheese, regular flavor
1/4 c sliced cucumber
3 sundried tomatoes diced up
3 large romaine leaves
2 slices cooked turkey bacon

Toast muffin. Spread cheese on both sides. Spread olive tapendade on one half. Pile up the rest of the stuff and dig in 🙂
