Honey Tilapia

Serve with Ginger Carrots and Steamed Potatoes with Garlic Sauce for an awesome meal 🙂

This is a very aromatic meal and the sauce can really be used on any white fish, delicate or firm. I make a little extra sauce and really smother the fish for extra goodness.

Healthy Snack Bars

Sweet honey keeps all the ingredients stuck together. These are great to keep on hand for when you get a ‘sweets attack’. So healthy, so full of MUFAs, yet honey sweet and just a bit chocolaty.

2 1/2 c unsweetened puffed wheat cereal
1/2 c pecan halves, chopped medium fine
1/3 c salted roasted shelled pumpkin seeds / pepitas (just roast in oven 5-10 minutes)

In a saucepan heat honey, vanilla and salt 2-3 minutes. The pour this over the dry ingredients and mix well then add chocolate and press it all into the prepared pan and spread it out. You can spray a wooden spoon with Pam to help. Bake 30-35 minutes or until top is brown. Use a knife to loosen the bars from the unlined sides of the pan and lift the whole thing out and set on a rack to cool a bit. Cut into 16 bars.

Balsamic Chicken

I love simply sautéed chicken – it needs nothing more than garlic powder, salt and pepper to have a great flavor. But then you take some honey roasted tomatoes and add them to the top for extra flair – – and you end up with a dish that is bright and fresh.

Tea and Honey Oranges

The addition of the tea actually makes this less sweet and you’ll find it’s a great snack or even a great side dish to a fish or chicken dinner.

Key Lime Pops (from the Zoku recipe book)

Even though I make these pops in a Zoku maker, you can make any of these recipes in traditional pop makers – each pop here is 2 oz. so adjust accordingly. And if you love pops like me, then do yourself a favor and get a Zoku 🙂 Their recipes turn out fantastic pops – I often skinny them up a bit, but I mostly use their measurements and basic recipe and am always pleased with the results.

The layer of graham cracker in this one really makes it taste like a slice of key lime pie – awesome !

Key Lime Pops
Key Lime Pops

6 servings
83 calories per serving

1 c skim milk
¼ c sweetened condensed milk
¼ c key lime juice (or regular lime juice)
2 T clover honey
¼ c crumbled graham crackers (optional)
Lime slices (optional)

Whisk all ingredients. If you want to place a lime slice along the side of the mold, do so. Then pour in ingredients and freeze completely (7-9 minutes in the Zoku, 6 hours in the freezer). If you want to use layers of graham cracker (like a graham cracker crust on a pie), then let a layer of lime freeze all the way – then add a layer of the graham crumbs and pack them down before adding more base liquid.
